If you need a quick weeknight meal, this chicken and rice soup recipe will hit the mark! It is so easy to throw together and done in literally minutes if you have a pressure cooker like an Instant Pot.
I love that I can get dinner done in just a few minutes with my Instant Pot. If you’re making this Instant Pot chicken soup, it’s important to cube the chicken so that it is all the same size. This makes sure that everything will cook evenly and at the same time.
I also like to make sure the veggies are chopped in similar sizes. Again, this helps everything cook evenly in the Instant Pot.
If you don’t have an Instant Pot or another brand of pressure cooker, don’t stress! This homemade chicken and rice soup can easily be made on the stovetop. It does take a few more minutes and a little bit more work but it’s still such an easy and quick recipe.

Instant Pot Chicken and Rice Soup Recipe
- 1 1/2 cups chicken raw, diced
- 1/2 cup rice uncooked
- 1 cup carrots
- 1/2 cup onion
- 1/2 cup celery
- 6 cups chicken broth
- 1 teaspoon parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
For the Instant Pot
- Add all of the ingredients to the Instant Pot.
- Cook on manual high pressure for 2 minutes.
- Allow to naturally release.
- Add all ingredients to a large pot.
- Bring to a boil and simmer until chicken is cooked through and rice is cooked about 15-20 minutes.
