Ground Beef freezer breakfast burritos are easy to whip up and stash in the freezer for a protein-packed breakfast on the go! Customize them any way you like!

Making a nutritious breakfast has never been easier. I love using my freezer to store protein-packed breakfasts like these Ground Beef Breakfast Burritos! It’s so easy to whip up a huge batch and then freeze them for later. 

Using Ground Beef in these make-ahead breakfast burritos is a great way to make sure the burritos are filling and nutritious. I know I’m always looking for filling breakfast options for myself and my kids, especially on busy school mornings!

Beef is such a great option for a back-to-school meal and the first meal of the day because it has protein, iron, and zinc that support healthy brain development and function now and for the future. Plus, it tastes amazing! 

Another thing I love about making breakfast burritos with Ground Beef is that it’s so easy to pair it with other great filling options. I love to pack veggies into these burritos so it’s a balanced meal, all in one tidy package. 

Filling Options for Freezer Breakfast Burritos

  • Onions {any color!}
  • Bell peppers
  • Green chilies
  • Zucchini
  • Cooked squash cubes or shreds
  • Cooked potato cubes or shreds
  • Any kind of firm cheese {cheddar, Montery jack, swiss, etc.}
  • Chives
  • Parsley
  • Spinach
  • Kale
  • Broccoli
  • Tomatoes
  • Tater tots

How to Wrap Freezer Breakfast Burritos

  1. Start by tearing a piece of parchment triple the width of your burrito. Wrap the burrito lengthwise, so that the ends are long. 
  2. Fold the parchment ends to either side of the burrito. 
  3. Next, rip a medium-sized square piece of aluminum foil and place the burrito on one corner.
  4. Wrap it up halfway, fold in the sides, and then continue wrapping. 
  5. Place the wrapped burritos in labeled freezer bags and store for a busy morning!

Ground Beef Freezer Breakfast Burritos

Equipment

  • Redmond Real Salt
  • Thermoworks MK4 Thermapen

Ingredients

  • 1 pound Ground Beef
  • 2/3 cup red pepper diced
  • 2/3 cup zucchini diced
  • 1/3 cup scallions sliced
  • 1 cup kale chopped
  • 1/2 teaspoon season salt
  • 1/4 teaspoon red pepper flakes
  • 18 eggs large
  • 1/2 cup milk
  • 3 tablespoons butter divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 18 tortillas medium, see note
  • 1 cup cheese use your favorite

Instructions

  • Brown Ground Beef in a large skillet. Drain any excess grease, if necessary.
  • Add 1 tablespoon of the butter, vegetables, season salt, and red pepper flakes. Cook on medium-high heat until browned and slightly softened.
  • Remove from pan and set aside.
  • Add remaining two tablespoons of butter to the pan on medium-low heat.
  • Whisk together eggs and milk in a large bowl.
  • Add to melted butter in the pan.
  • Scramble the eggs, adding in the salt and pepper when the eggs are almost done.
  • Combine eggs and beef and vegetable mixture.
  • Divide among 16-18 tortillas (amount will vary depending on the size of tortillas you use).
  • Eat right away, or wrap them in parchment and then foil to freeze for later.
  • To reheat from frozen, remove foil and place parchment wrapped burrito in the microwave for 1-2 minutes, or until heated to 165ºF.

Notes

The amount of burritos you are able to make will depend on the size of the tortillas you use. I use medium tortillas because the burrito are easier to warm up that way.

    This is amazing! I made a batch of these and put them in the freezer and when we went on a long road trip we took them out and warmed them in the hotel microwave and they were soo good! Thank you so much
