Lemon Salad Dressing + Easy Green Salad

Lemon salad dressing is an easy side dish and my favorite go-to, it comes together in minutes and is perfect for any salad. Pair this lemon vinaigrette with simple greens and some sliced onion for the easiest side dish ever!

This salad dressing is an old family recipe that has been around for years! Any time we need to whip up a quick salad, we make lemon salad dressing and just dress whatever veggies we have in the fridge. It could not be easier to make, everything is done in about 5 minutes.

The only trick to making a lemon vinaigrette is to JUST KEEP WHISKING. When you begin whisking, the mixture will look separated….

Easy Lemon Salad Dressing

But as you keep going, it becomes creamy colored a bright, lovely yellow color. This is seriously the easiest and most beautiful lemon salad dressing ever! And, being the lazy cook I am, I simply pour the mixed dressing into a measuring cup and then toss the salad right in the same bowl.

You can buy a bag of mixed greens, harvest your own from your garden, or just buy an assortment at the store and make your own mix. Or just serve the lemon vinaigrette over red leaf lettuce. 🙂 EASY!

I also toss some sliced onions in with the greens for some extra flavor, just use whatever you have – purple, yellow, white. Anything goes! Remember, the motto of this easy green salad and lemon vinaigrette is EASY. Are you with me yet???

How to Serve Lemon Vinaigrette 

Now, my little hostess trick is to just barely dress the salad, and then serve the remaining dressing on the table, that way you’re not serving dry lettuce {never good} but you’re letting everyone customize the salad to their taste. Say it with me: EASY!

Equipment

  • Redmond Real Salt
  • Ergo Spout

Ingredients

  • 1/4 cup lemon juice freshly squeezed, about 2 lemons
  • 1/2 cup olive oil good quality
  • 8 cups mixed greens or any salad of your choice.
  • salt and pepper to taste
US Customary - Metric

Instructions

  • Pour lemon juice into a bowl, gradually whisk in the olive oil until light yellow and creamy. 
  • Season with salt and pepper to taste. 
  • Pour 1/2 of the dressing over the salad and toss. Taste and add more if needed or serve the remaining dressing for guests to dress.
