I love a good hearty salad and this steak salad with balsamic dressing is not only filling but ultra flavorful! Beef is one of our favorite proteins over here and I love serving it in a variety of ways.
I usually use leftover steak in this salad but it literally only takes a few minutes to cook a steak up fresh if you need too. Lightly season it with salt and pepper, then pan fry it in butter and oil until it's medium-rare {145ºF} on the inside. Let it rest for 10 minutes before slicing it for the salad.

Recipe Ingredients
For the Steak Salad
- Cooked steak
- Tomatoes
- Salad greens
- Onion — I like using red onion for this salad.
- Blue cheese — or gorgonzola cheese
For the Balsamic Dressing
- Olive oil
- Balsamic vinegar
- Garlic
- Honey
- Dijon mustard
- Salt & pepper

Variations for Steak Gorgonzola Salad
- You can substitute gorgonzola cheese for the blue cheese.
- Use whatever vegetables you'd like in the salad.
- The salad greens can be any combination you like — I love the spring mix since it has multiple varieties of greens all mixed together.
How to Make Steak & Blue Cheese Salad
- Make the dressing first by combining all of the ingredients in a mason jar. Shake well to combine and let sit while you make the salad.
- For the steak salad, layer the sliced steak, tomatoes, and onions over the salad greens. Add any other vegetables you'd like.
- Crumble the cheese over the top. Add additional toppings if desired.
- Top with half of the salad dressing, serving the rest of the dressing on the side.

Expert Tips
- Build A Salad: The easiest way to build this salad is to layer the ingredients over the mixed greens. It looks amazing and it's so easy! I usually pour half of the dressing over the steak salad and serve the rest on the side so everyone can have as much as they like.
- Good Cheese: Usually, the higher quality the cheese, the more flavorful it will be. The steak can hold up to the strong flavor of either cheese, as can the balsamic dressing.
- Extra Flavor: If you want to kick up the flavor of the balsamic dressing, even more, crumble some of the blue cheese into the dressing and let the flavors meld for about 30 minutes.

Steak and Blue Cheese Salad

For the Steak Salad
- 8 ounces cooked steak (sliced, see note)
- 10 ounces tomatoes (sliced)
- 4 cups salad greens
- 1 purple onion (sliced)
- ⅓ cup blue cheese (or gorgonzola cheese, see note)
For the Balsamic Dressing
- ½ cup olive oil
- ¼ cup balsamic vinegar
- 1 teaspoon garlic (minced, about 1 clove)
- 2 teaspoons honey
- 1 teaspoon dijon mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
For the Balsamic Dressing:
- Combine all ingredients in a mason jar. Shake well to combine.
For the Steak Salad:
- Layer the sliced steak, tomatoes, and onions over the salad greens.

Notes
- Eight ounces of steak is about 2 small steaks or 1 large steak. I use a variety of cuts for this recipe. New York strips are our favorite.
- Gorgonzola is a great substitution for blue cheese, and the amount of cheese is flexible.
- Let the dressing rest while you assemble the salad so it has a bit of time to build flavor. I can literally just drink this dressing, it's so good!
- I'll usually serve some sort of garlic bread on the side with this salad for an easy side.

Made this last night. I had marinated sirloin grill steaks left over. I sliced the meat very thin, used blue cheese and red onion and radish. The dressing was really good. I added a little extra mustard and honey and a little lemon juice.
