This avocado salad recipe is an easy avocado recipe and a perfect as a side dish, or add some protein to make it a full meal!

This is such a simple and delicious summer salad! We love it on its own or as an addition to any tex-mex meal. It’s ready in minutes, which is my favorite thing in the summer time! And, who doesn’t love an easy avocado recipe?

How to Cut an Avocado

This avocado salad recipe is really simple, but if you aren’t familiar with how to handle an avocado I’ll show you a few tricks! Simple cut lengthwise along the whole avocado and twist.

This will expose the pit, which is easily removed by tapping your knife into it and then sliding it off with your thumb. DON’T put your hand under the blade! After that, peel or score in the skin and scoop out with a spoon.

What Kind of Tomatoes to Use for Salad

I love the variety of cherry tomatoes available in the grocery store, just slice them in half if they are too big. You want all of the ingredients of the salad to be similar sizes. I have gold cherry tomatoes and chocolate cherry tomatoes almost ready in my garden, I can hardly wait to use them in this recipe!

I used lemon in this recipe, but a combination of lemon and lime juice would be great too! Your citrus will be easier to juice if you roll it with mild pressure on a cutting board. It turns out that it’s also a great way to get some aggression out. Ha!

Garnish with a little bit of cilantro and that’s it! Salad finished. One day, I’d love to have a greenhouse where I can grow my own avocados. I actually don’t use them very much, because it’s so hard to find good ones! And I have an addition to growing my own food. Ha! It’s just so satisfying.

My favorite way to eat this easy avocado salad recipe is over taco salad or as a simple side. What would you serve this with???

Equipment

  • Redmond Real Salt

Ingredients

  • 3 avocados diced
  • 1 purple onion diced
  • 1 pint cherry tomatoes sliced, see note
  • 1/3 cup olive oil
  • 1 lemon juiced, see note
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
US Customary - Metric

Instructions

  • Combine avocados, tomatoes, and onion. 
  • Drizzle olive oil and lemon juice over the salad. 
  • Season with salt and pepper, to taste. 
  • Stir until well mixed.

Notes

If the cherry tomatoes are large, slice them in half. If they are smaller, feel free to leave them whole. 
Use as much lemon juice as you like, I like it tart and use 1 1/2 lemons. You can also use 1 lemon and 1 lime.
