What to Cook for Easter Dinner

Having an easy Easter dinner sounds a bit like an oxymoron, but it doesn’t have to be! Despite the fact that many people think of Easter dinner as needing to be the Springtime version of a Thanksgiving or Christmas feast, it can actually be made pretty simply.

For a lot of smaller or dislocated families, having a small Easter dinner celebration is a reality, but spending all day (or week) in the kitchen cooking for a small crowd can be crazy.

With Easter being a holiday to spend time together with the family, why not take a new twist on this holiday feast with this creative Easter dinner idea.

Imagine this- a sheet pan dinner for Easter. Everything you need to celebrate the day with your favorite fixin’s but without the hours of prep, the long hours on your feet and the inevitable backache from standing too long.

If that there doesn’t get you hooked on it, consider the fact that a sheet pan Easter dinner means there are significantly less dirty dishes you to clean and I bet that now you’re totally hooked on the idea!

Toss a few paper plates on the table for everyone to eat from and you can save yourself even more!

This easy Easter dinner is one you’ll want to tell everybody about and repeat yearly because who doesn’t love finding an easy way to reduce stress, time, effort, and aching feet?

Anyone who knows me knows that I love to find the easy way to get things done. Avoiding hours on my feet and reducing the manual labor to still end up with a meal that tastes like it was slow roasted with love is what it’s all about!

What is included in a traditional Easter dinner?

A traditional Easter dinner first includes a main protein. This is usually pork or lamb. It will also include sides like deviled eggs, potatoes, rolls, or salad. Dessert is a must and can be anything but carrot cake is an Easter favorite.

Simple Easter Dinner Ingredients 

  • 4 ham steaks 
  • 1/2 pound asparagus trimmed
  • 1/2 pound Brussels sprouts halved 
  • 4 potatoes sliced thin
  • 1 teaspoon salt 
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme dried 
  • 3 tablespoons olive oil

How Do I Prep the Vegetables and Potatoes?

First, wash everything and peel the potatoes, if desired.

Slice the potatoes into evenly sized coins and arrange them on the pan.

With your asparagus, you’ll want to chop off the bottom few inches to remove the wooden stalk part at the end.

You can also grab the tip and the bottom of the asparagus with both hands and bend it into a U shape and the asparagus will naturally break where the bad part ends leaving you with a perfectly good piece of asparagus.

For the Brussel sprouts, you’ll want to remove the outer 2 or 3 leaves and then cut them in halves or quarters depending on your preference or their size.

How to Make This Easy Easter Ham Dinner

  1. Preheat your oven to 450ºF.
  2. Arrange the potatoes on a baking sheet tray.
  3. Drizzle the potatoes with the olive oil, salt, and pepper.
  4. Bake for 10 minutes.
  5. Remove from oven and add ham, asparagus, and Brussels sprouts to the tray with the potatoes.
  6. Drizzle them with olive oil and sprinkle with salt, pepper, and thyme.
  7. Roast everything in the oven for an additional 15-20 minutes, or until everything starts to brown.

Can I Season Everything Differently? 

Yes, you sure can! I recommend making a little boat for each item in aluminum foil before applying any seasonings that you don’t want to touch another food item.

That not only helps to make the seasonings remain separate, but it also helps to make the clean up much easier! Double-win!

Can I Glaze My Ham?

Yes, you can glaze your ham but I do not recommend glazing it while it’s on this baking sheet unless it’s got it’s own aluminum foil boat around it to keep the glaze off of the other foods.

Unless you’re okay with them all touching, then it’s fine, and you can do whatever you want. You can also wait until the ham steaks are fully cooked and apply glaze just before serving.
