I love using leftover food creatively, and potatoes are something we always seem to have leftover. I hate throwing anything out, and Andy hates leftovers so creativity in the kitchen is essential! These breakfast burritos are the perfect way to use leftover potatoes and have them taste delicious all over again.
These healthy breakfast burritos are so easy and delicious. I used leftover baked potato in these but you could use anything you have on hand. Frozen hash browns work awesome too!
I usually throw in some sort of meat like bacon, sausage, or ham {tip: have lunch meat you need to use up? Toss it in!}. When my zucchini and peppers start to take off I also love including those in the burritos as well! These are pretty easy to make and customize to your taste!
Of course, eggs are an essential component to any breakfast burrito. I have chickens, which means I also have fresh eggs. If you are new to chickens or new to using fresh eggs, there are a few things you should know about them. Remember, these are just differences from store bought eggs - it doesn't make one or the other better. And if you just use regular old white eggs from the grocery store, that's perfect too! I do the same when my hens aren't laying or I'm throwing eggs out {due to deworming or treating illness}.
So, fresh eggs. The eggs are going to vary in size and shell and yolk color, which I explain more in this post. If the yolks are pale yellow or dark, dark orange, it doesn't matter. Yolk color varies based on what the hens are eating, all hens should be fed a nutritionally balanced diet but if they have access to grass, the yolks will be darker. You can see some yolk color variation in my eggs in the picture below.

You may also notice some "meat spots" in some of your eggs {see the yolk on the bottom left in the photo above}. I notice these more in dark brown eggs from my Maran breed hens. If these bother you, just pick them out or stay away from the eggs you know have them. This doesn't mean the egg was fertilized, it's just a normal part of the egg and it's totally ok to eat! But I know it can be weird if you're not used to it.
Another thing you may notice is pale spots on the yolks. Like before, this doesn't mean the egg is fertilized, it's just a spot on the yolk, similar to a meat spot. These are totally harmless and won't hurt you at all to eat. I just ignore then and cook everything up, it doesn't bug me.

Additionally, it's totally fine to eat fertilized eggs. Nothing will be developing in there unless it's been incubated or sat on by a very dedicated broody hen. Right now none of my eggs are fertilized because I don't have a rooster. But I previously did and will have two more in a couple months {they are young now} and it makes no difference in egg quality or taste.

Breakfast Burritos

Ingredients
- 4 tablespoons butter
- ½ cup onion (minced)
- ¾ cup veggies (diced, use your favorites)
- ¾ cup cooked meat (diced, use your favorites)
- ¾ cup leftover or frozen potatoes
- 6 eggs
- ½ cup shredded cheese (use your favorite kind)
- 2 tablespoons chopped fresh chives
- Salt and pepper to taste
- 4-6 Large flour tortillas
Instructions
- In a large skillet, melt 1 tablespoons butter and sauté meat, onions, and veggies until slightly browned. Remove from pan and set aside.
- Add 2 tablespoons of butter and add the potatoes, breaking them up as you get them in one even layer on the bottom of the pan. Season with salt and pepper. If dry, add a couple tablespoons of water and heat through with the lid of the pan on for 6-8 minutes. When done, remove from pan and set aside with veggies.
- Beat the eggs lightly with cheese. Add the last tablespoon of butter to the pan and pour the eggs in. Season with salt and pepper.
- Start scrambling the eggs, and when they are about halfway was done, add in the meat, onion, veggies, and potatoes and stir to combine.
- Cook until eggs are done. Taste and adjust seasonings. Add fresh chives and rollin warmed tortillas.
