    Bacon Preparation: Cook your bacon until it's crispy but not burned, and drain it on paper towels to remove excess grease. Crumble it into bite-sized pieces that will distribute evenly throughout the taco. Well-drained bacon prevents the tacos from becoming soggy.

    Ingredients
      

    • 6 flour tortillas
    • 6 large eggs
    • 1 cup sharp cheddar cheese, (shredded)
    • ½ cup bacon, (cooked and crumbled)
    • ¼ cup salsa

    Instructions
     

    • Whisk the eggs in a bowl until they are well mixed. Cook in a large pan over medium heat until scrambled.
    • Place a spoonful of eggs on each tortilla followed by the cheese, bacon, and salsa.
    • Fold up the tortillas and serve. The tacos can also be stored in the refrigerator or freezer for later.

    Tortilla Size: Six-inch tortillas work best for this recipe as they're the perfect size for handheld eating. Larger tortillas can be difficult to fold and eat neatly.
