I love twice baked potatoes, but sometimes the task of making them seems daunting. I love this casserole because it’s so easy to assemble and you get all the goodness of twice baked potatoes!
I love making this casserole, or any dish that has both stovetop and oven steps, in a GRIZZLY Cast Iron Skillet. It makes it so simple and quick to complete both steps.

What potatoes to use for Twice Baked Potato Casserole?
This twice baked potato casserole recipe is very flexible when it comes to which kind of potatoes you can use.
You can use fresh potatoes, dice them, and then boil them until fork tender. If you have leftover potatoes that are baked, mashed, or prepared another way, you can also dice those and use them. As long as they are lightly seasoned, any potatoes will do.
How to Make Twice Baked Potato Casserole
- In a GRIZZLY 10-inch casserole, fry bacon until moderately done. Remove and let drain.
- Add onions and cook until soft.
- Add water to the pan and deglaze.
- Combine cooked potatoes, the onion and water from the pan, ranch dressing, sour cream, and shredded cheese.
- Pour back into the GRIZZLY 10-inch casserole.
- Cover and bake at 350ºF for 20 minutes.
- Remove foil and bake 5-10 minutes longer until cheese is melted and bubbly.
- Garnish with scallions or chives.
Can twice baked potato casserole be made ahead?
You can make twice baked potato casserole ahead of time! You can make it the morning before you need, or even up farther ahead of time. As long as your ingredients are fresh, you can make it up to a week in advance.
Prepare it up until the baking step, then cover and keep it in the fridge until you need it. Bake as directed in the recipe.
Can you bake twice baked potato casserole?
Yes, twice baked potato casserole can be frozen. As above, prepare it up until the baking step, then cover and keep it in the fridge until you are ready to use it. Let thaw overnight in the refrigerator, then bake as directed in the recipe.

Ingredients
- 4 strips bacon
- 1/2 cup onion diced
- 1/2 cup water
- 2 pounds potatoes diced
- 3/4 cup sour cream
- 1/3 cup ranch dressing
- 2 cups cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons scallions or chives, minced
Instructions
