  • 4 strips bacon
  • 1/2 cup onion diced
  • 1/2 cup water
  • 2 pounds potatoes diced
  • 3/4 cup sour cream
  • 1/3 cup ranch dressing
  • 2 cups cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons scallions or chives, minced


  • In a GRIZZLY 10-inch casserole, fry bacon until moderately done. Remove and let drain. 
  • Add onions and cook until soft.
  • Add water to the pan and deglaze.
  • Combine cooked potatoes, the onion and water from the pan, ranch dressing, sour cream, and shredded cheese. 
  • Pour back into the GRIZZLY 10-inch casserole.
  • Cover and bake at 350ºF for 20 minutes.
  • Remove foil and bake 5-10 minutes longer until cheese is melted and bubbly. 
  • Garnish with chives or scallions.
