No Bake Cheesecake (no gelatin)

Easy no-bake cheesecake can be dressed up or down for any occasion and is perfect when you don’t want to use the oven.

Instead of using sweetened condensed milk, it uses a combination of heavy whipping cream and greek yogurt to keep a good consistency. You can use plain or vanilla Greek yogurt in this recipe. By switching out the flavors, you can easily create new cheesecake flavors like strawberry or honey.

How long does cheesecake take to set?

No-bake cheesecake can take  3 or 4 hours to properly set while it is in your fridge. Because this recipe doesn’t use gelatin, you won’t get a crisp edge. The crust will also set as you let it chill in the fridge. You can easily prepare this homemade no-bake cheesecake up to 24 hours in advance.

Why didn’t my cheesecake set up?

Again, this recipe isn’t going to give you a no-bake cheesecake with crisp edges because of the ingredients. Be sure you’re following the recipe and whipping the cream which will help. If you want it to be more firm, freeze it for a few hours before serving.

How long does a no-bake cheesecake last?

When properly stored and covered in your fridge, a no-bake cheesecake can last about 5 days. You can make sure that it is well stored by placing plastic wrap over the top or storing it in an air-tight container that can keep it from drying out.

Ingredients for no-bake cheesecake filling:

  • Cream cheese
  • Powdered sugar
  • Greek yogurt
  • Vanilla extract
  • Almond extract
  • Lemon juice
  • Heavy whipping cream
  • Graham cracker pie crust

How to make easy no-bake cheesecake

  1. In a large bowl, beat or whisk the cream cheese until smooth. 
  2. Add the powdered sugar and beat or whisk until smooth. 
  3. Add the greek yogurt, lemon juice, vanilla extract, and almond extract. Beat or whisk until smooth. 
  4. Add the cream and whisk or beat on high until light and fluffy and medium peaks form about 2 minutes. 
  5. Pour the prepared filling into the prepared crust. Smooth out. 
  6. Refrigerate for at least 3 hours (see note), up to overnight (see note).

  • 9-inch Springform Pan
  • Measuring Cups + Spoons
  • Liquid Measuring Cups
  • Glass Mixing Bowls
  • KitchenAid Hand Mixer

Ingredients

  • 16 ounces cream cheese two packs, room temperature
  • 1 1/2 cups powdered sugar
  • 1/2 cup greek yogurt see note
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 3 teaspoons lemon juice fresh squeezed, about 1/2 a lemon
  • 1 cup heavy whipping cream
  • 1 graham cracker pie crust see note

Notes

You can use plain, vanilla, honey, or strawberry Greek yogurt. 
The longer the cheesecake is refrigerated before slicing, the crisper the sliced edges and crust will be. 
You can make this up to 24 hours in advance of when you need it. It will keep in the fridge {covered} for up to a week.
If you want to make homemade graham cracker pie crust, use this recipe! I one and a half the recipe it if I am using it in a springform pan so it will go up the sides of the cheesecake more. You can just make a single recipe and use it in a springform pan (8 or 9 inches) or a standard pie plate.

    Thank you for this recipe. I do want to tell you that i used a substitution; I did not have any Whipping Cream on hand; I had a Premier Protein Shake (vanilla) in my pantry and I used that. You never missed the Whipping Cream, I will be using the Protein Shake again in this recipe. Thanks again for providing it.
