You can bake this cake in a few ways to fit whatever event you’re making it for. Obviously, the easiest way is just in a 9×13 pan, but you can make it in a circle pan, a spring-form pan, or even cupcakes.
- 9×13 pan: 30-35 minutes
- Two 9-inch pans: 20-25 minutes
- 9 1/2-inch springform pan: 40-45 minutes
- 28 cupcakes: 18-22 minutes

For the Cake
- 3 1/2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups sugar
- 3/4 cup oil
- 1 tablespoon vinegar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2 egg whites
- 2 cups water
For the Icing
- 12 tablespoons butter softened
- 2 teaspoon vanilla extract
- 7 cups powdered sugar
- 2 tablespoons heavy cream
Instructions
For the Cake
- Preheat oven to 350ºF.
- In a large bowl, whisk together flour, salt, baking powder, baking soda, and sugar.
- Add oil, vinegar, extracts, egg whites, and water.
- Whisk until combined.
- Pour into a greased 9x13 baking dish.
- Bake for 30-35 minutes or until a toothpick comes out clean.
For the Icing
- Whisk together butter and vanilla extract.
- Add in the powdered sugar gradually. Drizzle in heavy cream gradually until the icing is smooth.
- Whip for about 5 minutes.
- Ice cake once cooled.
