Can you meal prep eggs?
This is a tricky question, but the simple answer is yes, you can! Why was the question tricky? Simply put, there are different answers to this question because there are so many different ways that you can cook and prepare eggs!
Hard-boiled eggs can be made and stored in their shells in a fridge for a few days prior to needing to be used. Eggs cooked fried, soft boiled or sunny side up may not do too well when reheated simply because the recooking process could either risk drying them out or overcooking them. But scrambled eggs like the ones we are making can survive being made in advance

What size sheet pan are you supposed to use? It doesn’t say. Or better yet, can I use a 13×9?

I used one that is about 12×17. You can also use a 9×13, just adjust the baking time slightly until the center reaches 160ºF.
