    Oven roasted zucchini is a healthy and delicious side dish that pairs well with just about anything. The tender, crisp and flavorful zucchini slices lightly seasoned with cherry tomatoes make this dish one that is packed with flavors and textures.

    Eating healthy doesn’t need to feel like a chore when it tastes this delicious. Pairing these oven-roasted zucchini with your favorite meals like alfredo pasta dishes or BBQ chicken thighs can easily help to bring color and extra nutrition to your plate.

    This simple vegetable side dish goes great with both simple and complicated main dishes and adds a nice level of comfort to your plate.

    With such a fast and simple recipe you can have this side dish prepared in minutes. The hardest part of the recipe is waiting for it to come out of the oven.

    Midway through baking, it smells delicious and you start to get excited to eat it. If you can handle that little “struggle” then this easy zucchini recipe could be perfect for you.

    Serve your oven-roasted zucchini to the family and watch it disappear as everyone devours this simple side dish. With a side dish like this, you know it’s going to be a great option for summer and fall when squash is fresh off the vine and cheaper in the stores.

    It can even bring in a nice change to the more common veggie side dishes you’re serving and may even become a more common recipe used in your own home.

    How to Roast Zucchini in the Oven

    • Preheat your oven to 425 degrees.
    • In a bowl (or gallon sizes zipper topped bag) combine all of the ingredients together and toss.
    • Spread them out on a baking sheet in a thin even layer to reduce overlapping.
    • Roast them in the oven for 15 minutes.

    Using a gallon sized zipper topped bag can help to reduce the amount of cleanup needed and make dinner prep easier because you can simply hand it to a kid to shake. (They love doing this!)

    Can You Freeze Oven Roasted Zucchini?

    I do not recommend freezing zucchini because it won’t work out well. Due to the high water content of zucchini, you will find that freezing this vegetable will lead to a mushy mess once they’ve thawed. 

    How do You Store Leftover Roasted Zucchini?

    After you’ve let your zucchini cool completely, transfer the veggies to an airtight container or zipper topped bag and keep it stored inside of the fridge for up to 4 days. They taste better when fresher, so I recommend eating them sooner rather than later.

    How to Reheat Roasted Zucchini

    To reheat and eat your leftover oven-roasted zucchini, take it out of the fridge and place them onto a lightly greased or parchment-lined baking sheet.

    Preheat your oven to 400 degrees and bake your zucchini until they are warmed through. Be careful not to over bake, this shouldn’t take long to get your zucchini nice and hot, so check often.

    Ingredients
      

    • 2 zucchini (sliced, medium size)
    • 1 cup cherry tomatoes (whole or sliced in half)
    • ¼ cup olive oil
    • ½ teaspoon salt
    • ¼ teaspoon pepper

    Instructions
     

    • Preheat the oven to 425ºF.
    • Toss together all the ingredients.
    • Spread on a sheet pan.
    • Roast for 15 minutes.
