How to Make Slow Cooker Beef and Noodles

Step 1: Heat the butter in a medium skillet over high heat. Add beef and brown on each side. Once brown, remove and place in the crock pot.

Step 2: Combine the beef, beef broth, and seasonings in the slow cooker.

Step 3: Cook on low for 6 hours or high for 3 hours.

Step 4: Add the egg noodles, stir, and cook for an additional 30-45 minutes until the noodles are done.

You may have added the noodles too early and cooked them for too long. It's important to add them towards the end of the cooking time and only cook until they are tender. Fresh or frozen noodles can also make a difference in texture! I'd recommend using dried noodles for the best results
It's unlikely you'd need to thicken this dish since the noodles will absorb some of the liquid and thicken the sauce. But if you do need to thicken it, try adding a cornstarch slurry (mix equal parts cornstarch and cold water) to the crockpot during the last 30 minutes of cooking. Around 1 tablespoon of slurry should do the trick.
No, they aren't, but they can be used interchangeably in many recipes. Beef tips can come from different cuts of meat, such as sirloin or tenderloin. Stew meat is typically tougher, often from the chuck or round. You can use either beef tips or stew meat in this recipe!

Beef Tips and Noodles (Crock Pot Recipe)
Ingredients
- 2 tablespoons butter
- 1 pound stew meat
- 2 tablespoon garlic (minced)
- 1 teaspoon onion powder
- 2 cups beef broth
- ½ teaspoon thyme (dried)
- ½ teaspoon sage (crushed, dried)
- 1 tablepoon Worcestershire sauce
- 1 teaspoon soy sauce
- ¼ teaspoon pepper
- ¾ teaspoon salt
- 2 bay leaves
- 3 cups egg noodles
Instructions
- Heat the butter in a medium skillet over high heat.
- Add half the beef and brown on each side. Once brown, remove and place in the crock pot.
- Repeate with the remaining meat.
- Combine the beef, beef broth and seasonings in the slow cooker.
- Cook on low for 6 hours or high for 3 hours.
- Add the egg noodles, stir, and cook for an additional 30-45 minutes until the noodles are done.
Notes
- Use a chuck roast: I use stew meat because it's inexpensive and easy, but a chuck roast would also work well! Cook it on low for 7-8 hours until fork tender, shred, and add the egg noodles 30-45 minutes before serving.
- Add some sour cream: Stir in ¼ cup at the end for a creamier sauce - like a beef stroganoff!
- Substitute with chicken: This recipe also works well with chicken. Use boneless, skinless chicken breasts and chicken broth. Cook on low for 4-5 hours or high for 2-3 hours until cooked.
- Mix in some veggies: This recipe would be delicious with added vegetables like carrots, celery, and mushrooms. Carrots can be added at the beginning with the beef, and delicate veggies like mushrooms should be added later on with the noodles.
- Add more broth: The amount of broth in this beef and noodles crockpot recipe is more than enough to cook everything, but if you want a soup or stew consistency, add an extra cup or two of broth.
