Heat the butter in a medium skillet over high heat.
Add half the beef and brown on each side. Once brown, remove and place in the crock pot.
Repeate with the remaining meat.
Combine the beef, beef broth and seasonings in the slow cooker.
Cook on low for 6 hours or high for 3 hours.
Add the egg noodles, stir, and cook for an additional 30-45 minutes until the noodles are done.
Notes
Use a chuck roast: I use stew meat because it's inexpensive and easy, but a chuck roast would also work well! Cook it on low for 7-8 hours until fork tender, shred, and add the egg noodles 30-45 minutes before serving.
Add some sour cream: Stir in ¼ cup at the end for a creamier sauce - like a beef stroganoff!
Substitute with chicken: This recipe also works well with chicken. Use boneless, skinless chicken breasts and chicken broth. Cook on low for 4-5 hours or high for 2-3 hours until cooked.
Mix in some veggies: This recipe would be delicious with added vegetables like carrots, celery, and mushrooms. Carrots can be added at the beginning with the beef, and delicate veggies like mushrooms should be added later on with the noodles.
Add more broth: The amount of broth in this beef and noodles crockpot recipe is more than enough to cook everything, but if you want a soup or stew consistency, add an extra cup or two of broth.
