    Recipe FAQs

    What exactly is a Pizookie?

A pizookie is a pizza cookie, a large cookie baked in a skillet. A pizookie is often served with ice cream.

What type of skillet should I use for a pizookie?

A cast-iron skillet is usually recommended for making a pizookie because it retains heat well and ensures even baking. However, other oven-safe skillets can also be used.

How do I prevent the pizookie from sticking to the skillet?

The butter should keep the pizookie from sticking, but you can also line the bottom of the skillet with a round piece of parchment paper for extra protection.

Can I customize my pizookie with different toppings?

Absolutely! You can add nuts, caramel, peanut butter, or other types of chocolate chips. After baking, top with ice cream, whipped cream, or a drizzle of chocolate or caramel sauce for extra indulgence.

    Expert Tips

    • Choose your chips: You can use pretty much any type of chip—milk chocolate, semi-sweet chocolate, peanut butter chips, white chocolate chips, M&M candies, or a combination. They are all delicious and it's fun to stir in your own combinations.
    • Choose your gooey-ness level: You can bake the pizookie an additional 5-10 minutes if you like the center less gooey. The edge will be a little crustier as it cools, but while it's still warm, the edge will still be soft.
    • Keep the pizooke from sticking: The butter used in the pan should keep the cookie from sticking, but you can also use a round of parchment paper in the bottom of the pan to prevent sticking.

    Ingredients

    • 1 cup butter
    • 1 cup brown sugar
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla
    • 2 cups + 2 tablespoons all purpose flour
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 ½ cups chocolate chips (semi-sweet or milk chocolate)
    • 2 cups vanilla ice cream (optional for serving)

    Instructions

    • Preheat oven to 325 degrees F.
    • In a 10 or 12-inch cast iron skillet, melt butter over medium heat stirring often, until it starts to bubble and is completely melted. Turn heat to low and add sugar and brown sugar, stirring well until the mixture is well combined.
    • Remove from the heat and let the mixture cool for 10 minutes.
    • Stir in the eggs and vanilla.
    • Stir in flour, baking soda, and salt.
    • Add 1 cup of the chocolate chips and stir to combine. Smooth the top of the cookie in the pan. Sprinkle the rest of the chocolate chips on top of the cookie so that they just rest on the top and look pretty.
    • Bake at 325 degrees F for 25 to 35 minutes or until the edges are golden brown. The center of the skillet cookie will have a crust but will still be gooey underneath; the edges will be crisp. The smaller pan will cook for more time, and a larger skillet will cook for less time.
    • Top with vanilla ice cream and eat while still warm.

    Notes

    • You can use pretty much any type of chip—milk chocolate, semi-sweet chocolate, peanut butter chips, white chocolate chips, M&M candies, or a combination. They are all delicious, and it's fun to stir in your own combinations.
    • You can bake the pizookie an additional 5-10 minutes if you like the center less gooey. The edge will be a little crustier as it cools, but while it's still warm, the edge will still be soft.
    • Add nuts, caramel, peanut butter, or other types of chocolate chips to change up the flavors.
    • After baking, top with ice cream, whipped cream, or a drizzle of chocolate or caramel sauce for extra indulgence.
