I love having homemade pancakes but I also love the convenience of a mix, so I just make my own mixes – for everything. It has become a little bit of an obsession. And a problem. Because I don’t have room for any more containers to hold my mixes! One day, I will have a GIANT butlers pantry and my life will be complete.ย This is the best homemade pancake mix recipe on the planet. I just took what I loved about homemade pancake recipes and morphed them into mix form.

I love having mixes because it turns making a potentially time consuming breakfast – like pancakes, into a quick one. I make pancakes almost once a week because they are so easy to throw together when I have a homemade pancake mix waiting for me. I alsoย just love pancakes so we eat them a lot!

To make these a bit more wholesome, I’ll throw in about 1/4 cup ground flaxseed to the mix or even sub some of the flour for ground oats. It makes me feel better about drenching them in delicious syrup ๐Ÿ™‚ HA! But there are actually quite a few ways to make these more on the healthy side!

Ingredients

    For the mix:
  • 4 cups all-purpose flour (I like unbleached)
  • 2 cups whole wheat flour
  • 6 tablespoons sugar
  • 2 tablespoons baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon table salt
  • To make pancakes:
  • 2 1/4 cups pancake mix
  • 2 cups milk
  • 1 tablespoon fresh lemon juice
  • 1 large egg
  • 3 tablespoons unsalted butter, melted and cooled

Instructions

    Mix Directions
  1. Whisk all together and store in an air-tight container. Or a baggie.
  2. Pancake Directions
  3. Whisk milk and lemon juice together and set aside to thicken for a few minutes.
  4. Whisk egg into melted butter into the milk.
  5. Gently mix into the pancake mix, do not over mix. There will be some lumps.
  6. Cook 'em up and enjoy!!

The best ever homemade pancake mix!

Now for some extra flavor!! I adapted this homemade pancake mix recipeย to make some lemon ricotta pancakes and they were seriously the best pancakes I have ever eaten. Use the recipe above but add the zest from 1 lemon and about 1/3 cup of ricotta cheese, reducing the butter to 1 tablespoon. You’re welcome. One day, I’ll give you my delicious syrup recipe.

This is the best homemade pancake mix recipe! Soft, fluffy, delicious pancakes.  The mix is easy to make and easier to change up for any type of pancake!

Don’t be afraid to get creative in the kitchen! Add some of your favorite fruit or poppy seeds or whatever floats your boat! Chocolate chips float Andy’s boat.
