    Even Distribution: Whisk the spices thoroughly to ensure consistent flavor in every pinch, preventing clumps of individual spices. A fine-mesh strainer can help break up any lumps if your spices have caked together. Mix the burger seasoning again before each use, as some spices may settle over time. Consider doubling the batch since proper mixing becomes easier with larger quantities.

    Application Timing: Season your burger patties 15-30 minutes before cooking to allow the flavors to penetrate the meat properly. This resting time helps the salt draw out moisture, which then gets reabsorbed along with the seasoning flavors. For a lighter application, season just before grilling to maintain the spices' textural contrast. Room temperature patties will absorb seasoning better than cold ones straight from the fridge.

    I always use fresh, high-quality spices since old ones lose potency and taste stale. Check dates and replace spices older than two years for best results. Freshly ground whole spices provide the most vibrant flavors.

    This burger spice mix pairs with any ground meat, but it's also fantastic on grilled chicken, pork chops, or even roasted vegetables. We use it often during grilling season because it works with practically everything on the barbecue.

    You can also sprinkle it on other dishes beyond the grill! I love dusting it over baked potato wedges, mixing it into ground turkey for meatballs, or even adding a pinch to scrambled eggs for extra flavor.

    Ingredients
      

    • 2 tablespoons coarse sea salt
    • 1 ½ tablespoons paprika
    • 1 tablespoon chili powder
    • 1 tablespoon garlic salt
    • 1 tablespoon onion powder

    Instructions
     

    • Whisk together all of the spices in a small bowl until they are homogenous.
    • Sprinkle over your burger patty as desired.
    • Note: It's best to season meat that's been set out of the fridge for a bit since seasonings don't like to stick to cold meat. I start seasoning mine 20-30 minutes before cooking and then again right before tossing on the grill or in the pan.

    Notes

    Recipe Yield and Scaling: This makes about ¼ cup of seasoning, and can season 12 burgers when using 1 teaspoon for each. Feel free to scale the recipe up to make a larger batch!
    Applying the Seasoning: You can either add this seasoning mix to your uncooked burger by working it in with your hands or adding it on top of a freshly cooked burger patty.
    Customization Options: For a spicier blend, replace the chili powder with chipotle chili powder and a pinch of red pepper flakes. Other spices you can add include a teaspoon of dried minced onion, cumin, oregano, and black pepper.
    Alternative Mixing Method: You can combine the seasoning by placing all of the spices in a sealed jar and shaking for about 30 seconds.

    How much seasoning should I use per burger patty?

    For a standard ¼-pound patty, start with about ½ teaspoon of seasoning per side, then adjust to taste. Remember that some of the seasoning will fall off during cooking, so don't be afraid to be generous. I plan for using 1 teaspoon per burger.

    Is this seasoning spicy?

    The heat level is quite mild and family-friendly. The chili powder provides warmth rather than intense heat, making it suitable for most palates. If you prefer more kick, add a pinch of cayenne pepper to the mix.

    What if I don't have coarse sea salt?

    Regular table salt or kosher salt work fine as substitutes, though you may want to reduce the quantity slightly since table salt is more concentrated. Coarse sea salt provides better texture and more gradual flavor release, but any salt will do in a pinch.
