    Even Baking: Rotate the baking sheet halfway through cooking to ensure uniform golden browning. Place the danishes at least 2 inches apart on the baking sheet to allow for proper expansion. Use parchment paper to prevent sticking and make cleanup easier.

    When I make these danishes, I always beat the cream cheese mixture until it's completely smooth to avoid any lumps. Taking the cream cheese out 30 minutes before starting makes such a difference. Room temperature cream cheese blends effortlessly compared to cold, which can leave you with stubborn chunks no matter how much you mix. I aim for a consistency that's spreadable but not too thin, almost like a thick frosting that holds its shape when piped or spooned onto the pastry.

    Ingredients
      

    • 1 puff pastry sheet
    • 1 egg
    • 2 tablespoon water
    • 4 ounces cream cheese
    • 3 tablespoons sugar
    • 2 tablespoons orange juice
    • ½ teaspoon vanilla extract
    • ⅓ cup raspberry jam
    • ½ cup raspberries (sliced)
    • ¼ cup powdered sugar glaze (optional)
    • 1 teaspoon orange zest

    Instructions
     

    • Preheat oven to 400ºF.
    • Slice the puff pastry crust into 6 even pieces.
    • Place the sections on a sheet tray.
    • Combine cream cheese, sugar, orange juice, and vanilla extract.
    • Divide the cream cheese between the puff pastry sections.
    • Layer the raspberry jam over the top of the cheese mixture.
    • Fold in the corners to the center over the cheese and raspberry jam.
    • Combine the egg and water. Whisk well.
    • Brush over the puff pastry squares. Set aside.
    • Bake for 15 -20 minutes or until golden brown.
    • Once cooled, place fresh raspberries on top of the jam.
    • Drizzle with powdered sugar glaze and sprinkle with orange zest.
