    My 2 Best Tips For Making Ham and Noodle Casserole

    #1 - Try a Homemade Sauce: I usually replace the canned soup with this simple homemade white sauce — Melt 4 tablespoons butter in a pan, then add 4 tablespoons flour, whisking to create a slurry. Add 2 cups milk while whisking smooth. Cook for a few minutes over medium heat, stirring constantly, until thickened. I season with some salt and pepper and use this in place of the cream soup, half and half, and sour cream.

    #2 - Don't Skip the Breadcrumb Topping: I highly recommend taking the extra few minutes to add the breadcrumb topping and let it crisp up the top of the casserole. It's so worth the wait! If I have panko breadcrumbs on hand, I'll use those for even more of a crunch.

      Packed full of cheese, tender ham, egg noodles, and a flavorful sauce, this easy casserole will surely become a whole family favorite!

      If you're ok with semi-homemade or short on time, use a cream of soup to shorten the prep time, or make a homemade white sauce if you'd like. This will create a creamy, savory base and the shredded cheese will help thicken the sauce. To finish it off, I sprinkle some bread crumbs on top for a crunchy contrast!

      This is a great recipe to use up any leftover meats (ham, chicken, ground beef) and vegetables. I will usually add either leftover veggies or frozen vegetables, like broccoli or peas, to this recipe so it's a true one-dish meal.

      Ingredients
        

      • 1 can cream of chicken soup (Or another cream of soup or a homemade white sauce.)
      • ½ cup half and half
      • ½ cup sour cream
      • ½ teaspoon garlic powder
      • ½ teaspoon onion powder
      • ½ teaspoon salt
      • ¼ teaspoon pepper
      • 2 cups cheddar cheese
      • 2 cups ham steak or leftover ham (diced)
      • 12 onces egg noodles (cooked)
      • ½ cup breadcrumbs
      • 2 tablespoons butter (melted)

      Instructions
       

      • Preheat the oven to 375ºF.
      • In a large glass bowl, combine the cream of chicken soup, half and half, sour cream, onion powder, garlic powder, salt, and pepper.

      • Spread the mixture into a baking dish.

      • Spread over the top of the casserole.

      • Bake for 30 minutes covered, and 5 minutes uncovered.

      Notes

      Substitutions & Variations: I love using up what I already have to hand, so here are some great substitutions to consider:
      • Ham: While this recipe calls for cooked ham, you can use any type of leftover meat, such as turkey or chicken.
      • Cream of Chicken Soup: Any cream of soup can be used, or try my homemade substitution below!
      • Cheddar Cheese: Cheddar adds a lovely sharp edge and creamy texture, but you could also use any shredded cheese that melts well, like Swiss cheese or Monterey jack cheese.
      • Sour Cream: I just love how sour cream makes the sauce extra creamy. However, plain Greek yogurt is a great option if you don't have any on hand.
      • Noodles: Egg noodles are the traditional choice, but you could also try other pasta shapes like macaroni or penne. Just make sure they have a similar cooking time as egg noodles; otherwise, your chosen pasta might not cook correctly.
      • Seasonings: Add in some Italian seasoning, Dijon mustard or any other herbs and spices you like.

      • Vegetables: Roasted broccoli, Instant Pot green beans or green onions sprinkled on top are great options!
      • Garlic bread: My Italian cheese and herb bread would add even more cheesy goodness.
      • Relish: For a brilliant contrast of flavors, a tangy relish would be perfect!

      What can I substitute for cream of chicken soup?

      If you don't have cream of chicken soup on hand, you can substitute with cream of mushroom, cream of celery, or even cream of broccoli soup. Each will provide a slightly different but equally delicious flavor profile. You can also make a homemade cream sauce if you prefer to avoid canned soups—I recommend using the cheese sauce from my mac & cheese recipe!
