Notes
Substitutions & Variations: I love using up what I already have to hand, so here are some great substitutions to consider:
Ham: While this recipe calls for cooked ham, you can use any type of leftover meat, such as turkey or chicken.
Cream of Chicken Soup: Any cream of soup can be used, or try my homemade substitution below!
Cheddar Cheese: Cheddar adds a lovely sharp edge and creamy texture, but you could also use any shredded cheese that melts well, like Swiss cheese or Monterey jack cheese.
Sour Cream: I just love how sour cream makes the sauce extra creamy. However, plain Greek yogurt is a great option if you don't have any on hand.
Noodles: Egg noodles are the traditional choice, but you could also try other pasta shapes like macaroni or penne. Just make sure they have a similar cooking time as egg noodles; otherwise, your chosen pasta might not cook correctly.
Seasonings: Add in some Italian seasoning, Dijon mustard or any other herbs and spices you like.
Try a Homemade Sauce: I usually replace the canned soup with this simple homemade white sauce — Melt 4 tablespoons butter in a pan, then add 4 tablespoons flour, whisking to create a slurry. Add 2 cups milk while whisking smooth. Cook for a few minutes over medium heat, stirring constantly, until thickened. Season now if you want to, like with salt and pepper, or season after mixing into the recipe.Serving Suggestions: Serve this creamy pasta dish on its own for a complete meal, or pair it with a simple side dish for something extra special. I like to serve it with the following:
A green salad: Especially one that has crunchy veggies like cucumbers and celery.
