    In this frozen carrot recipe, you'll notice I don't simply, throw my veggies in a pot of water and hope for the best! Instead, I will take a few minutes to maximize the carrots' flavor potential.

    I use the delicious combination of butter, garlic, and seasonings to create the best-tasting frozen carrots you've ever had. The carrots simmer in the melted butter mix, taking on the flavor as they cook.

    How to Cook Frozen Carrots

    Step 1: Combine all of the ingredients in a medium skillet.

    Step 2: Bring to a simmer.

    Step 3: Simmer uncovered for 5-8 minutes, or until all the water is almost evaporated.

    While this recipe is specifically designed for frozen carrots, you can use fresh carrots. You'll need to add 5-7 minutes to the cooking time and may need a bit more liquid since frozen carrots release some water as they cook.

    My frozen carrots always turn out mushy. How can I prevent this?

    The key is to not thaw them first - add them directly from the freezer to the pan. Also, avoid overcrowding the pan and stick to medium-high heat so they can cook quickly without steaming too much.

    How to Freeze Carrots

    1. Start by washing the carrots thoroughly, then peel the skin off if desired.
    2. Cut the carrots into your preferred size; frozen diced carrots are always a good option.
    3. Blanch the carrots by boiling them in water for 3 minutes.
    4. Remove the carrots from the boiling water and submerge them in an ice bath for another 3 minutes.
    5. Drain the carrots and pat dry with a paper towel.
    6. Flash-freeze the blanched carrots by lining a baking sheet with parchment paper. Place the carrots on top of the sheet in an even layer.
    7. Place the baking sheet in the freezer for 1-2 hours and then transfer the carrots to a resealable bag or airtight container.
    8. Label the carrots with the freezing date and store them in the freezer for up to one year.
