Ingredients
- 4 large russet potatoes
- ¼ cup butter
- ½ teaspoon black pepper
- 1 teaspoon salt
- 1 cup shredded cheddar cheese
- ¼ cup sour cream
- ¼ cup bacon bits
Instructions
- Preheat your air fryer to 400°F.
- Wash each potato and pat them fry with paper towels. Use a sharp knife to thinly slice the potato about ¾ of the way through so the potato is still intact.
- Place the potatoes in the air fryer basket and set aside.
- In a small bowl, melt the butter. Whisk the butter together with the salt and pepper. Use a pastry brush to coat each potato in butter.
- Cook the potatoes for 20 minutes, and then check to see if you need to brush on a little more butter.
- Cook for another 15 minutes, and check to see if they are fully cooked on the inside. Cook for a few more minutes if needed (all air fryers are a bit different).
- Top each potato with cheese, and cook for an additional 2 to 3 minutes, or until the cheese is bubbly.
- Serve the potatoes, topped with sour cream and bacon bits if desired.
