Air Fryer Hasselback Potatoes

These Air Fryer Hasselback Potatoes are about to become your new favorite side dish! With crispy edges, a tender interior, and a loaded topping of melted cheese, bacon bits, and sour cream, they're impossible to resist!
Wash each potato and pat them fry with paper towels. Use a sharp knife to thinly slice the potato about ¾ of the way through so the potato is still intact.
Place the potatoes in the air fryer basket and set aside.
In a small bowl, melt the butter. Whisk the butter together with the salt and pepper. Use a pastry brush to coat each potato in butter.
Cook the potatoes for 20 minutes, and then check to see if you need to brush on a little more butter.
Cook for another 15 minutes, and check to see if they are fully cooked on the inside. Cook for a few more minutes if needed (all air fryers are a bit different).
Top each potato with cheese, and cook for an additional 2 to 3 minutes, or until the cheese is bubbly.
Serve the potatoes, topped with sour cream and bacon bits if desired.

Best Served Fresh: I highly recommend enjoying these potatoes right away for the best experience. Storing leftovers isn't ideal since reheating causes the potatoes to lose their signature crispiness and the cheese won't have that same melty, gooey texture.Cheese Variations: You can switching up the cheese variety. Feel free to experiment with pepper Jack for some heat or Colby Jack for a milder flavor instead of the classic cheddar.Seasoning Options: Try incorporating garlic powder for a savory punch, red pepper flakes for a spicy kick, or Italian seasoning for an herby twist.Protein Pairings: These hasselback potatoes pair beautifully with substantial main dishes.
