    Stick First: Insert the sticks before applying lemon juice and caramel to ensure they stay secure throughout the coating process. This prevents the sticks from loosening or shifting once the apple surface becomes wet, giving you a more stable base to work with.

    Skin Side Up: Place apple slices skin-side up when drizzling caramel so it pools around the flesh and creates better adhesion to the peel. This positioning allows gravity to work in your favor, helping the caramel settle into the apple rather than sliding off the smooth skin surface.

    I always make sure to use room temperature apples because cold apples can cause the caramel to seize and not stick properly to the fruit. Leaving them on the counter for at least 30 minutes before slicing makes all the difference in achieving that perfect caramel coating.

    After tossing with lemon juice, I thoroughly pat the apple slices dry with paper towels to remove excess moisture that could prevent caramel from sticking. Even a little bit of wetness can create a barrier between the apple and caramel, so I take my time with this step.

    I love using a plastic squeeze bottle or even a clean ketchup bottle to create perfectly controlled chocolate drizzles and patterns, which is much easier than spooning. This method gives you bakery-quality designs without any mess or frustration.

    Ingredients
     
     

    For the Caramel Apples

    • 5 Granny Smith apples (medium sized, room temperature)
    • 1 lemon (juiced)
    • 11 ounces caramel (see note)
    • ¼ cup heavy cream

    Optional Toppings

    • ⅔ cup chocolate chips (semi-sweet )
    • ⅔ cup chocolate chips (milk chocolate)
    • 2 teaspoons vegetable oil
    • 2 squares white almond bark
    • ½ cup pecans (chopped)
    • colored sprinkles

    Instructions
     

    For the Caramel Apples

    • Slice Apples away from the core into 1-inch slices.
    • Insert wooden sticks or skewers into each apple slice through the skin side.
    • Toss with lemon juice and pat dry with a paper towel and let sti while you prepare the caramel.
    • Combine caramels and cream in a microwave-safe bowl.
    • Microwave in 30-second increments, stirring between each one until microwave-safe (see note). This may take a few minutes.
    • Drizzle the caramel over the apple slices on the sheet tray, skin side up. See note.
    • Repeat until all the slices are coated in caramel.
    • Let the caramel set, you will have to trim the excess caramel off the sides when you pick them up.

    Optional Toppings

    • Melt semi-sweet chocolate chips with 1 teaspoon oil in a microwave safe bowl, stirring every 15 seconds until melted.
    • Melt milk chocolate chips with 1 teaspoon oil in a microwave safe bowl, stirring every 15 seconds until melted.
    • Melt white almond bark in a microwave safe bowl, stirring every 15 seconds until melted.
    • Drizzle over caramel-coated apple slices in any design you like!
    • Dust with sprinkles or chopped nuts. 

    Notes

    Caramel Quality: Fresh individually wrapped caramels are essential for smooth melting. Stale or old caramels become extremely difficult to work with once heated.
    White Coating Choice: Almond bark melts more smoothly and spreads better than white chocolate, though both options work well depending on your preference and availability.
    Temperature Maintenance: Keep melted caramel and toppings warm in a water bath by placing bowls in a large dish with hot tap water. This prevents hardening during decorating session.
    Serving Timeline: Plan to serve these treats within a few hours of making them. Cut apples release moisture that causes caramel to slip off, making overnight storage ineffective.

      Tried this… failed miserably. Dried the apples well, melted the wax off. No idea what went wrong. Carmel wouldn’t stick.
