    Don't Overbeat: Stop mixing as soon as the mousse becomes light and fluffy-about 3 minutes- to avoid a grainy texture.Watch carefully as the mixture transforms from dense to airy, and immediately turn off the mixer when you see soft peaks forming to preserve that silky-smooth consistency.

    I always make sure the chocolate mixture is fully chilled before whipping - this is crucial for achieving that light, airy texture.

    For extra-fluffy results, I place my mixing bowl in the freezer for 15 minutes before whipping the chilled chocolate mixture.

    Ingredients
      

    • 2 cups heavy whipping cream
    • 1 ¼ cups semi-sweet chocolate chips
    • 2 tablespoons light corn syrup
    • ½ teaspoon vanilla extract
    • ¼ teaspoon coconut, almond, or cherry extract (optional)

    Instructions
     

    • In a double boiler, melt chocolate chips with ⅔ cup of the cream and the corn syrup.
    • Once melted and smooth, stir in vanilla and flavored extract, if using.
    • Stir in remaining 1 ⅓ cup cream and stir to combine.
