The combination of savory sausage and sweet, tender cabbage creates an irresistible meal everyone will love. I use kielbasa sausage, a type of Polish sausage, for this recipe which gives it a great flavor. The cabbage is cooked until it's soft, and the kielbasa, onions, and broth flavors really come through.

The simple cooking process, different ways you can serve it, and how it's perfect for meal prep makes crockpot cabbage one of my favorite recipes!

    1. Add the cabbage, chopped onions, and kielbasa to the slow cooker. Toss lightly to combine.
    2. Add the broth.
    3. Cover with the lid and cook on low for 2-3 hours, Stirring occasionally.

How Long to Cook Cabbage in the Crockpot

For this easy recipe, you'll want to cook the cabbage and sausage in your crockpot on low for 2-3 hours. This is how long it takes to cook a whole head of cabbage (sliced). If you want to use more or less cabbage, you'll need to adjust the cooking time accordingly.

You'll know when your crockpot cabbage and sausage are ready as the cabbage will be soft, and the kielbasa will be fully cooked through.

    Recipe FAQs

How long does crockpot cabbage last?

This crockpot cabbage and sausage recipe will keep in an airtight container in the fridge for up to 4 days. To reheat, pop it in the crockpot again for 1-2 hours on low until it's warmed through. You may need to add a splash of water or broth if it's looking too dry.

Can you freeze this slow cooker cabbage recipe?

Yes, you can freeze this healthy dish in an airtight container for up to 6 months. It would be best to freeze it in individual portions, as this will make reheating it much easier. You can simply put the frozen portions in your crockpot on low for 2-3 hours or until it's fully reheated. Again, you may need to add some liquid if it looks dry.

What add-ins work well with this crockpot recipe cabbage and sausage?

Feel free to add any extra veggies or proteins you want into this dish!

If you want to add a bit of extra flavor or texture, try adding some fresh herbs such as thyme or parsley. Bacon pieces and bacon grease are also classic add-ins for a crockpot cabbage dish. Finally, add a pinch of red pepper flakes or cayenne pepper if you want some spice.

You can add these ingredients at the start of cooking or sprinkle them on top (where appropriate) just before serving!

    Expert Tips

    • Slice Cabbage Consistently: Cut your cabbage into uniform slices (about 1-inch thick) to ensure everything cooks evenly. This prevents some pieces from becoming mushy while others remain too firm.
    • Brown the Kielbasa First: For extra flavor, consider browning the sliced kielbasa in a skillet before adding to the crockpot. This creates a beautiful caramelization that adds depth to the entire dish.
    • Layer Strategically: Place onions on the bottom of the crockpot, followed by cabbage and then kielbasa on top. This layering helps distribute flavors more evenly throughout the cooking process.
    • Don't Overfill: Fill your crockpot only about ⅔ full to allow proper heat circulation. Cabbage will cook down considerably, but starting with too much can lead to uneven cooking.

    • Chef's Knife + Pairing Knife
    • Cutting Board
    • Liquid Measuring Cups

    Ingredients

    • 1 head cabbage (sliced)
    • 1 onion (sliced, large)
    • 12 ounces kielbasa (sliced)
    • 2 cups chicken broth (or vegetable)

    Instructions

    • Add the cabbage, onion, and kielbasa to the slow cooker. Toss lightly to combine.
    • Add the broth.
    • Cover with the lid and cook on low for 2-3 hours, Stirring occasionally.

    Notes

    • Add basic seasonings at the beginning, but reserve fresh herbs or finishing spices until the last 30 minutes of cooking for brightest flavor.
    • Let the dish rest with the lid off for about 10 minutes before serving. This allows flavors to settle and excess moisture to evaporate for the perfect texture.
    • While kielbasa works beautifully, don't be afraid to experiment with smoked sausage, andouille, or even Italian sausage for different flavor profiles! Each brings its own unique character to this humble dish.
    • If you prefer a less soupy final dish, use only 1½ cups of broth initially. You can always add the remaining ½ cup later if needed. This gives you more control over the final consistency of your cabbage and sausage.
