I love crispy potatoes but hate cooking them on the stovetop. It takes so much babysitting and they take forever to get soft enough! I came up with an AMAZING method for getting the perfect crispy roasted potatoes in the oven. Creamy on the inside with that flavorful crunch on the outside.
I wanted to come up with a method that didn't dry out the potatoes. I often found recipes left dry and chalky potatoes. I wanted something that tasted like you par-boiled the potatoes and then crisped them in a pan but without all that work. Cuz I am super lazy. And I hate dishes!

How to Make Oven Roasted Crispy Potatoes
- Preheat the oven and toss potatoes with olive oil and seasoning.
- Spread the potatoes in an even layer on a sheet tray that has been lined with parchment or foil, and cover completely with foil.
- Bake covered for 30 minutes, then uncover and toss the potatoes.
- Finish baking, uncovered, until soft, about 10 more minutes.

You can, however in this recipe we mimic the boiling step by covering the potatoes for the first 30 minutes to seal in that moisture.

- Perfect Potatoes: The best types of potatoes for roasting are those that are high in starch and low in moisture. This is because they will result in a crispy exterior and fluffy interior. Some examples of great roasting potatoes are russet, Yukon gold, and fingerling.
- High Heat & Proper Spacing: When roasting potatoes, you want a high oven temperature so the potatoes cook through and get crispy on the outside. Spread them in a single layer on a large baking sheet, ensuring no pieces are touching. For this recipe, 450ºF is the right temperature.
- Flip and Rotate: Midway through roasting, take the time to flip and rotate your potatoes. This simple step ensures even browning and prevents any sad, burnt spots.

- 2 pounds potatoes (any kind works, I like yukon gold best, 1 inch diced)
- ¼ cup olive oil
- 2 teaspoons season salt
- 1 teaspoon table salt
- 1 teaspoon black pepper
- ½ teaspoon paprika
Instructions
- Preheat oven to 450 degrees F.
- Toss potatoes with olive oil and seasoning.
- Spread potatoes in an even layer on a sheet tray that has been lined with parchment or foil.
- Cover completely with foil.
- Bake covered for 30 minutes.
- Uncover and toss the potatoes.
- Finish baking, uncovered, until soft, about 10 more minutes.
Notes
- Take time to completely dry your potato pieces — the drier the potato surface, the more effectively it will transform into a golden, crunchy exterior when roasted. Let the potatoes sit and air dry for a few extra minutes to ensure maximum moisture removal.
- About 2-3 tablespoons of olive oil per pound of potatoes will create a luxurious, crispy coating. Toss the potatoes thoroughly to ensure every piece is evenly and generously coated, which is the secret to achieving that irresistible golden exterior.

I was looking on your site for your other oven roasted potato wedge recipe that I love, but this one came up first in my "potato" search and I decided to go for it. Holy cow! These are amazing! They looked good in your pics, and I was intrigued by your description of soft inside and crispy outside, but seriously, they were the star of the meal tonight! My husband kept saying, "these are gooood" and I couldn't stop snitching just one more from the bowl. A keeper for sure! Next time I'm thinking I might try some smoked paprika for a little change.
