You will love these Roast Potatoes in the Oven

I love crispy potatoes but hate cooking them on the stovetop. It takes so much babysitting and they take forever to get soft enough! I came up with an AMAZING method for getting the perfect crispy roasted potatoes in the oven. Creamy on the inside with that flavorful crunch on the outside.

I wanted to come up with a method that didn’t dry out the potatoes. I often found recipes left dry and chalky potatoes. I wanted something that tasted like you par-boiled the potatoes and then crisped them in a pan but without all that work.

Cuz I am super lazy.

And I hate dishes.

Obviously, when you want to keep moisture in, you put a lid on whatever you’re cooking. I decided to apply the same principle to my potatoes. I baked them covered with foil for the majority of the cooking time and then took the foil off just for the last 5-10 minutes to really crisp up.

Covering the potatoes also allowed me to use a high heat which cooked the potatoes more quickly, didn’t dry them out, and gave me that crisp I was looking for.

I use this recipe all the time now!!! I especially love it for beefing up sheet pan meals. Sometimes they are a little too light for my crew and we need a bit more to get us full after a long workday.

I typically never roast potatoes with other veggies or meat, they just take so long I find everything else ends up overcooked! I’ll start the potatoes using this method and then prep the sheet pan meal and finish them up together. Two sheet pans, two sheets of parchment and minimal mess!

I kept the seasonings pretty basic on the recipe card, but you can season them however you like! Toss some garlic powder in there, some herbs, whatever you like! We love to serve these with my Sausage Sheet Pan Dinner to beef it up a little bit 🙂 .

Equipment

  • Redmond Season Salt
  • Sheet Pans
  • Stainless Steel Spatula
  • Liquid Measuring Cups
  • Glass Mixing Bowls
  • Measuring Cups + Spoons

Ingredients

  • 2 pounds potatoes any kind works, I like yukon gold best, 1 inch diced
  • 1/4 cup olive oil
  • 2 teaspoons season salt
  • 1 teaspoon table salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
US Customary - Metric

Instructions

  • Preheat oven to 450 degrees F.
  • Toss potatoes with olive oil and seasoning.
  • Spread potatoes in an even layer on a sheet tray that has been lined with parchment or foil.
  • Cover completely with foil.
  • Bake covered for 30 minutes.
  • Uncover and toss the potatoes.
  • Finish baking, uncovered, until soft, about 10 more minutes.

    I was looking on your site for your other oven roasted potato wedge recipe that I love, but this one came up first in my “potato” search and I decided to go for it. Holy cow! These are amazing! They looked good in your pics, and I was intrigued by your description of soft inside and crispy outside, but seriously, they were the star of the meal tonight! My husband kept saying, “these are gooood” and I couldn’t stop snitching just one more from the bowl. A keeper for sure! Next time I’m thinking I might try some smoked paprika for a little change. The possibilities are endless, I’d imagine. YUM!

      Ah!! Yay!!! This makes me so happy to hear that you all loved them so much! Yes, they are super versatile. I also like to throw some veggies in with them halfway through baking for a quick breakfast side too. So many great options!
