Oven Roasted Crispy Potatoes

These oven roasted crispy potatoes are the perfect easy side dish to any meal! Crispy and flavorful on the outside and creamy and soft inside, they're a versatile addition to any dinner. Whether you're cooking for family or entertaining guests, these potatoes will quickly become a favorite on your table!
2poundspotatoes(any kind works, I like yukon gold best, 1 inch diced)
¼cupolive oil
2teaspoonsseason salt
1teaspoontable salt
1teaspoonblack pepper
½teaspoonpaprika
Instructions
Preheat oven to 450 degrees F.
Toss potatoes with olive oil and seasoning.
Spread potatoes in an even layer on a sheet tray that has been lined with parchment or foil.
Cover completely with foil.
Bake covered for 30 minutes.
Uncover and toss the potatoes.
Finish baking, uncovered, until soft, about 10 more minutes.
Notes
Take time to completely dry your potato pieces — the drier the potato surface, the more effectively it will transform into a golden, crunchy exterior when roasted. Let the potatoes sit and air dry for a few extra minutes to ensure maximum moisture removal.
About 2-3 tablespoons of olive oil per pound of potatoes will create a luxurious, crispy coating. Toss the potatoes thoroughly to ensure every piece is evenly and generously coated, which is the secret to achieving that irresistible golden exterior.
Midway through roasting, take the time to flip and rotate your potatoes. This helps with crispiness.
