Homemade chili cheese dip is cheesy and delicious and uses shredded cheese and cream cheese, no processed cheese! Packed with flavor and delicious add-ins.

Chili cheese dip is an incredibly thick and creamy cheese dip you’re going to love at parties or on gameday. Tailgate foods are all about easy to eat appetizers, chips, and dips, so why not dish up some queso dip and chips while watching your team score?

Using a mixture of cheese, spices, and simple chili ingredients, you can really add in some delicious flavors and textures to your traditional queso recipe. This chili cheese dip will have you scoring points with the whole family, it’s so good!

Gamedays often mean curling up on the couch and watching the game live on tv, so of course, it makes sense that you’ll want to have as little time away from the screen as possible. Having appetizers or easy to make and serve dishes means that you can spend more time where it counts and less of it in the kitchen. 

This chili cheese dip is slow-cooked in two hours and allows you to prep it before a game and serve it when you want it. While that’s great, another major benefit of making this queso recipe is that it doesn’t dirty that many dishes either!

So after you’ve exhausted yourself from jumping and yelling at the screen, you don’t have to attack a mountain of dirty dishes!

How to Make Queso Dip

  • In a saute pan, brown the ground beef, and the onion until the beef is cooked and the onions are soft and translucent.
  • Add in the spices and then cook for another 3 minutes.
  • Combine the ground beef mixture and the rest of the ingredients in the slow cooker. ⠀
  • Cook on low for up to 2 hours. Keeping it on the warm setting if you need to keep it melted for a gathering or party.

How do you thicken chili cheese dip?

Remember that you want a nice thick dip to help coat your dips and dipping foods, but if you find it to be too thin for your tastes, you can thicken it. To thicken the chili cheese dip, you’ll want to either add in a little flour or do a cornstarch slurry. Careful not to over-thicken your dip. 

You can also thin your dip by adding in a little milk or water but do so sparingly as a little can go a long way.

Can Cheese Dip be frozen?

You may find that this dip can be frozen and thawed again for use, but be warned that the textures may slightly change. To freeze, store in an airtight container or a heavy-duty freezer bag.

How far in advance can you prepare the chili cheese dip?

This dip could be prepared the day before. Brown your ground beef and cook the onions, add in the spices and then set them aside in a zipper-topped bag in the fridge. Then on game day all you need to do is throw everything in the crockpot and turn it on low. Super easy and could be done in 5 minutes or less!

What can you serve with chili cheese dip?

When you have such a delicious queso dip, you want to pair it with things that would naturally taste good, here are a few ideas.

  • Tortilla chips
  • Doritos
  • Cornbread
  • Hot dogs
  • Baked potatoes

Pouring a ladle full of sauce over the top of any of these foods would no doubt be delicious!

Ingredients

  • 16 ounces medium cheddar cheese
  • 8 ounces cream cheese
  • 1/2 pound ground beef
  • 1/2 cup onions diced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 15 ounces pinto beans 1 can
  • 1 cup diced tomatoes canned
  • 4 ounces green chiles diced

Instructions
