My 2 Best Tips For Making Zucchini in the Air Fryer

Don't Skip the Preheating: Always preheat your air fryer for 5 minutes at 370°F before adding the zucchini. This ensures the cooking process starts immediately and helps achieve that perfect crispy exterior.

Remember the Halfway Stir: Set a timer to remind yourself to stir the zucchini at the 6-minute mark! This crucial step ensures all sides get evenly browned and prevents sticking to the basket.

This zucchini in air fryer recipe takes just 12 minutes from start to finish, making it perfect for busy weeknights when you need a quick, healthy side dish. The air fryer's circulating hot air creates beautifully crispy edges while keeping the inside tender!

With only five simple ingredients - zucchini, olive oil, red pepper flakes, garlic powder, and salt - you can create a deliciously seasoned side dish that pairs perfectly with any meal.

The combination of spices adds a subtle kick without overwhelming the natural flavor of the zucchini, but you can easily swap in different seasonings like onion powder, paprika, or lemon pepper seasoning for a different taste.

    Ingredients

    • 3 cups zucchini (sliced, about 2-3 zucchinis)
    • 1 tablespoon olive oil
    • 1 teaspoon red pepper flakes
    • 1 teaspoon garlic powder
    • 1 teaspoon salt

    Instructions

    • Preheat your air fryer for 5 minutes at 370°F.
    • Combine all of the ingredients in a large bowl. Fold the ingredients together until the zucchini is evenly coated in oil and spices.
    • Transfer the zucchini to your air fryer basket and cook for 12 minutes, stirring halfway through at the 6-minute mark. (Set a timer if needed!)
    • Remove the zucchini from the air fryer and serve while still hot.

    Notes

Peel or No Peel: While you are welcome to peel your zucchini before slicing it, it is not necessary.
Cut Uniformly: Slice your zucchini into consistent thickness (about ¼ to ½ inch) to ensure even cooking. Uniform pieces will all finish at the same time, preventing some from being overcooked while others remain underdone.
Alternative Flavorings: Other spices you can add to your zucchini include onion powder, paprika, and lemon pepper seasoning.
    Storage & Reheating:
    • You can store leftovers in the refrigerator for up to 2 days. Place a paper towel in the storage container to absorb excess moisture.
    • Reheat in the microwave for 45 seconds to 1 minute. Keep in mind that reheated zucchini will be slightly softer than when freshly made.
    • For crispier results, try reheating in the air fryer for 2-3 minutes at 350°F.

    Recipe FAQs

Do I need to peel the zucchini before air frying?

No, peeling is completely optional! The skin adds extra nutrients and helps the zucchini hold its shape during cooking. Simply wash the zucchini thoroughly and slice as directed.

How do I prevent my air fryer zucchini from getting soggy?

The key is not overcrowding the air fryer basket and stirring halfway through cooking. Also, pat the zucchini slices dry with paper towels before seasoning if they seem particularly wet.

Can I use frozen zucchini for this recipe?

Fresh zucchini works best for this recipe as it maintains better texture and doesn't release as much moisture. If using frozen zucchini, thaw completely and pat very dry before seasoning and cooking.
