Frosted sugar cookie bars are a tasty treat that cuts down on prep time so that’s there’s more time for eating! Soft cookies with pillowy perfect icing.

With sugar cookie bars, there is no chilling, rolling, or cutting out cookies and putting them onto a baking sheet. Just a simple bar cookie with frosting, which adds to its charm.

With a pressed cookie dough in a pan and a homemade frosting spread over the top, this easy dessert looks impressive, rustic, and comforting.

There’s just something about sugar cookies and pink frosting that feels like a great childhood memory with every bite, but these cookies take it up a notch.

With a little bit of ground cloves and yogurt in the cookie dough, this isn’t your traditional sugar cookie dough bars recipe. But, it’s those unique differences that add to the flavor and texture! Trust me, you want them.

Soft and sweet cookie bars are great for parties, snacking or even cookie exchanges. Add some sprinkles to the top or switch out the frosting colors to fit a theme or make them more “fun.” Although, what can be more fun than eating the best cookies ever? Exactly. 😉

How to Make Sugar Cookie Bars

  • Preheat your oven to 350 F degrees.
  • In a bowl, sift together the dry ingredients and then set it aside.
  • In a large bowl, cream together the shortening and sugar.
  • Add in the eggs and vanilla. Mix well.
  • Add in the yogurt and mix well again.
  • Add the dry ingredients to the wet ingredients and mix until just combined. The dough shouldn’t feel sticky to the touch.
  • Line a baking sheet pan with parchment paper.
  • Spread the dough out evenly over the top of the sheet pan (it won’t reach the edges) Trim the edges if necessary.
  • Bake for 15-18 minutes until they’re light and dry in color.

How to Make the Icing

  • In a bowl, whip together the powdered sugar and butter on low speed.
  • Add in the vanilla extract, almond extract, cream, and food coloring.
  • The consistency should be light and loose.
  • Beat for 5-8 minutes until it’s light and fluffy.
  • Once the cookie bars have cooled completely, spread the icing over the cookies.

Can You Make Sugar Cookies Bars in a Baking Dish?

Yes, if you don’t have a baking sheet handy, a 9×13 baking dish would work great too. Line it with a parchment paper sling and you can pull it out much easier. The cookies will be thicker in a 9×13 pan, so you’ll need to extend the cooking time.

How Long Are Sugar Cookie Bars Good For?

If left properly stored in an airtight container at room temperature they can last up to a week and still taste great! You can keep them stored in the fridge too in case you like them cold although this doesn’t extend the lifespan very long.

Can You Freeze Sugar Cookie Bars?

Absolutely! After letting your cookies cool completely, and letting the frosting set. Cut the bars into personal sized servings and then freeze them until solid for about an hour on a baking sheet.

Then transfer them to an airtight container for up to 6 months. If you individually wrap them in plastic wrap they make for a great grab and go treat for lunchboxes!

Ingredients

For the Cookies

  • 3 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup plain yogurt see note for substitutions

For the Icing

  • 1/2 cup butter softened
  • 6 cups powdered sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon almond extract
  • 2 tablespoons cream
  • 3 drops red food coloing optional
US Customary – Metric

Instructions

Notes

Sour cream can be substituted for the plain yogurt. You can also use vanilla yogurt or Greek yogurt.
