    My 2 Best Tips For Making This Easy Buckeye Candy Recipe

    Dipping Technique: Use a fork or toothpick to dip each ball, leaving the characteristic peanut butter "eye" visible on top. Work quickly but gently to avoid breaking the delicate peanut butter balls. Having all your balls ready on the baking sheet before starting the dipping process ensures efficiency and prevents the chocolate from cooling too much.

    Proper Consistency: The peanut butter mixture should hold together well but not be sticky when rolling into balls. If it's too soft, refrigerate for 15-20 minutes to firm up before shaping. Conversely, if it's too stiff, add a tablespoon of melted butter to achieve the right texture.

    I usually keep my dipping fork in the freezer for 10 minutes before coating. The cold metal prevents chocolate from sticking and creates smoother, cleaner coatings with minimal drip marks.

    I let my melted chocolate cool slightly before dipping - it should be warm, not hot. Hot chocolate melts the peanut butter filling and creates messy coatings, so I always test with one ball first.

    You can enjoy these buckeyes as an after-dinner treat or pack them in lunchboxes for a sweet surprise! I love serving them alongside coffee or pairing them with fresh fruit to balance the richness.

    And of course they're especially lovely to make during the Christmas holiday season and make a fun addition to a cookie or sweets board!

    Easy Buckeye Candy Recipe

    Ingredients
      

    • 16 ounces creamy peanut butter ((2 cups))
    • 1 pound powdered sugar ((3.5 cups))
    • ½ cup butter (melted)
    • 1 tablespoon vanilla
    • 1 ½ pounds melting chocolate ((see notes))

    Instructions
     

    • In a large bowl mix together the peanut butter, powdered sugar, melted butter, and vanilla. You can use a stand mixer, hand mixer, or just a sturdy wooden spoon to mix it, it's up to you. Just be sure it's well combined to form a smooth thick dough.
    • Roll the peanut butter mixture into 1-inch balls using your hands — about a tablespoon of dough. Place the prepared balls on a parchment paper-lined baking sheet.
    • Melt your melting chocolate according to package directions. I generally use the double-boiler method on the stove after scorching a few too many batches of chocolate in the microwave!
    • Using a fork, lift a ball of peanut butter dough and lower it into the warm melted chocolate, taking care to not dip it fully. You should have a spot on the top that is about the size of a dime showing of the peanut butter; this is what makes it look like a buckeye!
    • Remove from the chocolate and gently tap the fork on the edge of your bowl to remove extra chocolate. Place the buckeye on a piece of parchment or waxed paper to set.
    • Repeat with remaining peanut butter balls and allow the chocolate to set before serving.
    • Store leftovers at room temperature. 

    Notes

    Chocolate Selection: You can find melting chocolate sold in big chunks during the holidays or you can look for melting chocolate near the chocolate chips.
    Avoid Almond Bark: I don't recommend chocolate or brown almond bark for this recipe — it's a little waxy.
    Gift Presentation: These make excellent homemade gifts when placed in decorative tins or boxes lined with parchment paper. Add a ribbon and a tag with the recipe name for a personal touch that recipients will treasure.
    Even Sizing: For evenly sized portions, use a cookie dough scoop when rolling the peanut butter mixture into balls. 
    Storage
    • Store finished buckeyes at room temperature for up to 1 week.
    • Freeze for up to 3 months and set out to come to room temperature before serving or wrapping up as a gift.

    How To Make Buckeye Candy

    Step 1: Mix peanut butter, powdered sugar, melted butter, and vanilla until smooth and thick.

    Step 3: Melt chocolate using double-boiler method, then let cool slightly until warm.

    Step 4: Dip each ball into the melted chocolate, leaving a small spot exposed on top. Place on parchment to set completely before serving.

    Recipe FAQs

    Can I use natural peanut butter for this recipe?

    While you can use natural peanut butter, conventional creamy peanut butter works best because it has stabilizers that help the mixture hold together better. If using natural peanut butter, you may need to add extra powdered sugar to achieve the right consistency.

    What if my chocolate gets too thick while dipping?

    If your melting chocolate becomes too thick during the dipping process, gently reheat it using your preferred method (double boiler or microwave in short bursts). You can also add a teaspoon of coconut oil or shortening to thin it out.

    Why is there a spot of peanut butter showing on top?

    The exposed peanut butter "eye" is what makes these candies look like actual buckeyes (the nuts from Ohio's state tree). This characteristic appearance is traditional and shows that you've made authentic buckeye candies rather than fully-coated peanut butter balls.
