Crispy Potato Wedges are a great side dish for any meal. Fancy enough for the holidays and easy enough for every day. Packed with flavor and delicious!

Making your own crispy potato wedges is an easy way to make a delicious snack or side dish. Pairing these wedges with any dish you’d normally pair fries with, like a sloppy joe, or eat them as is because they’re that good. 

While buying a bag of frozen french fries from the grocery store might sound like an easy solution, making your own isn’t much more difficult and allows you to play with the seasonings as you want them to be.

Not only that, but it’s a frugal way to use up unused russet potatoes before they go bad! In fact, homemade potato wedges are so cheap to make you could probably make 3 times as much as you’d get from a freezer bag for a fraction of the price! Doesn’t that just sound like a great reason to make your own potato wedges?

How to make potato wedges

  1. Preheat your oven to 400 degrees.
  2. Wash your potatoes thoroughly and then cut into wedges.
  3. Combine the remaining ingredients and toss with potatoes to coat.
  4. Place the potatoes on a lined baking sheet, leaving plenty of room between them so that they can roast.
  5. Bake the potatoes until they are golden brown and fork-tender (about 45 minutes).

How do you cut potato wedges?

  • Place your washed potato on a cutting board and cut in half lengthwise.
  • Lay the flat side on the board so that the rest of the cutting is easier.
  • Depending on the size of your potato you may want to cut them 2 or 3 times lengthwise to create your wedges.
  • Cutting at a 60-degree angle from the outside of the potato into the center is a great way to create that triangular wedge look.

How do you stop wedges from sticking?

One of the worst parts of making your own fries or wedges is getting them golden brown and then they stick to the cooking pan. Placing a piece of aluminum foil that was sprayed with nonstick spray on the pan helps, but it can only do so much.

Another great tip is to wash your cut potato wedges before adding the other ingredients. Simply toss them in a colander and run them under the water to remove the additional starches and then shake them dry or pat them dry with a paper towel before mixing with the other ingredients.

  • Glass Mixing Bowls
  • Chef's Knife + Pairing Knife
  • Santoku Knife
  • Knife Sharpener
  • Redmond Real Salt
  • Sheet Pans

Ingredients

  • 4 pounds russet potatoes
  • 1/4 cup butter melted
  • 1/4 cup olive oil
  • 3 tablespoons dijon mustard
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3 tablespoons rosemary freshly chopped, see note

Instructions

  • Preheat oven to 400ºF.
  • Wash potatoes thoroughly. Cut into wedges.

  • Place potatoes on a lined baking sheet, leaving plenty of room between them so they can roast. I usually use 2 baking sheets for 4 pounds of potatoes.
  • Bake potatoes until golden brown and fork-tender, about 45 minutes.
