How to Make Potato Wedges

Crispy Potato Wedges are a great side dish for any meal. Fancy enough for the holidays and easy enough for every day. Packed with flavor and delicious!

Equipment

Ingredients
  

  • 4 pounds russet potatoes
  • ¼ cup butter (melted)
  • ¼ cup olive oil
  • 3 tablespoons dijon mustard
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3 tablespoons rosemary (freshly chopped, see note)

Instructions
 

  • Preheat oven to 400ºF.
  • Wash potatoes thoroughly. Cut into wedges.
  • Combine the remaining ingredients and toss with potatoes to coat.
  • Place potatoes on a lined baking sheet, leaving plenty of room between them so they can roast. I usually use 2 baking sheets for 4 pounds of potatoes.
  • Bake potatoes until golden brown and fork-tender, about 45 minutes.
