Homemade brownie cookies are super easy to make {no box required!}, chewy, soft, and the perfect chocolate fix! Easy to make in one bowl without a mixer.
When I say that these brownie cookies are what your chocolate-craving dreams are made of, it’s no exaggeration! These homemade brownie cookies are so dang easy you won’t even be sad you didn’t have a box mix in your pantry.
I know the idea of using a box mix for cookies is to make it easier, but truly you won’t miss it. It takes just a few minutes to throw all of the ingredients together and you can totally do it in one bowl.
I melt the chocolate chips in a large bowl first, this is most easily done in the microwave. The best way to melt chocolate in the microwave is to do 30-second increments, stirring between each one. You’ll only need about 1 minute to 1 minute 30 seconds to melt the amount called for in this recipe.
The stirring and gradual heating make sure the chocolate chips don’t burn. YOu’ll want to stop microwaving the chocolate chips once they are almost totally melted. Using the residual heat to melt them all the way will make sure the chocolate is nice and glossy and perfectly melted.
Once the chocolate is melted, I add the sugar and oil to cool it off before adding the eggs and mixing them in, one at a time.
After that, all you need is the dry ingredients and you’re ready to bake these babies up! See, super easy brownie cookies from scratch – am I right?
The dough for this brownie cookies recipe can be a little deceiving, it is pretty soft and sticky but you should be able to scoop it and have it hold it’s shape once it’s on the sheet tray.
The brownie cookies are finished baking when the edges are set and the tops have a nice sheen to them, not doughy. These cookies are chewy and soft enough that you don’t need to worry about leaving the middles gooey.

Homemade Brownie Cookies

- 2 1/2 cups flour all purpose
- 1/3 cup cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup semi-sweet chocolate chips melted
- 2 cups sugar
- 3/4 cup oil vegetable, canola, or olive
- 3 eggs large
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350ºF.
- In a large bowl, melt the chocolate chips by microwaving in 30-second intervals, stirring between each one. Stop when the chocolate chips are almost melted, but not all the way. They will finish melting as you stir them together.
- Add the sugar and oil, mix well.
- Add the eggs and vanilla extract, mix well.
- Add the flour, cocoa powder, baking powder, and salt. Mix until totally combined.
- Portion into rounded tablespoons and bake for 10 minutes or until the edges and tops are set.
