Unlike traditional mashed potatoes where you have butter or milk and cream added to give a fluffy texture, this creamed potato recipe uses cream cheese, cream, and seasonings to make this dish smooth and delicious.
It’s just as easy to make and doesn’t take any extra time to do so. Doesn’t it sound great already?
With the slightly tangy flavor from the cream cheese and the earthy seasonings you really have a dish that goes great with anything.
Even adding a little shredded cheddar cheese or cooked bacon pieces to your creamed potatoes can help pull in more flavorful goodness.

How to Make Herby Creamed Potatoes
- Wash your potatoes well and then dice them into cubes that are roughly 1.5” big.
- Boil in a large pot of water until they are so soft that they are practically falling apart.
- Drain the water and return the pot to the stove over low heat. Don’t worry if there is still a small amount of water in the pan.
- Add the remaining ingredients and stir well. The potatoes will fall apart and become creamy as you stir. This is supposed to happen.
You can use any potato to make creamed potatoes, but I personally like red potatoes best.
The flavor and texture works well with these added seasonings and makes the dish feel a little more classy and special.
Especially when I leave some red skin in the bowl for appearances.
Honestly, no. The creamed potatoes are so flavorful and moist that gravy isn’t needed at all. That said, if you really want to add gravy over the top, you can add it.
This side dish is one that you can dress up or down depending on the main course. This means if you want a fancy beef roast or prime rib, it works great as a side dish, but it can also go just as nicely with some barbecued chicken thighs and coleslaw.

- 4 red potatoes medium sized
- 1-2 oz. cream cheese
- 2-3 tablespoons of cream
- 3 tablespoons of butter
- 1 tablespoon basil
- 1 tablespoon parsley
- 2 teaspoons rosemary
- salt and pepper To taste, don’t be shy! Potatoes need it.
Instructions
- Wash potatoes well and dice about 1.5 inches cubed. Boil until they are very soft almost falling apart. Carefully pour off water, don't worry if there is a small amount in the bottom of the pan.
- Place back on low heat and add the rest of the ingredients. Stir well, the potatoes will fall apart a little bit as you stir – that's supposed to happen!
