    This strawberry galette recipe is one that you’ll want to use over and over again and not just because it’s super simple, but because it’s delicious too. With fresh sliced strawberries surrounded by pie crust you can feel that taste of summer in every bite.

    Top your slice with a dollop of homemade vanilla ice cream or some whipped cream for that wonderful strawberries and cream fill that will have you licking the plate clean.

    Of course, if you leave off the whipped topping or ice cream you can make a convincing argument to serve this strawberry galette as breakfast food.

    Another great way to make this dish a little more special is to make your own homemade pie crust. That said, if you’re crunched for time or already have it on hand, no one is going to come after you with pitchforks for using a storebought pie crust. Hide the pitchforks, just in case. 😉

    What’s the difference between a galette and a tart?

    The two are practically one in the same but they do have one characteristic that sets them apart. A tart is often formed and baked inside of a tart pan. A galette is a type of free-standing tart.

    Meaning that instead of using a pan, you’re laying it out like a pizza, adding the toppings and then flipping the edges up to create it’s own rustic shape.

    Tart crust is a little more dry compared with pie crust, the recipes for them are slightly different.

    Can you make a galette ahead of time?

    You can make the filling for the galette and the pie dough ahead of time, keep each separate, and covered in the fridge for up to 3 days in advance.

    Then when you want to make your delicious dessert, it’s much faster to prepare (which means faster to eat too!)

    Can I freeze my galette?

    You can! A baked galette can be covered and frozen for up to 3 months. To thaw, simply place it in the fridge overnight and then reheat to eat and serve warm.

    How to make strawberry galette

    • Preheat your oven to 375ºF degrees.
    • Combine the strawberries, flour, lemon juice, and sugar in a glass mixing bowl.
    • Place the pie crust on a parchment lined baking sheet.
    • Pour the strawberry filling into the center of the pie crust, leaving about 3 inches of space around the edge of the pie crust.
    • Fold the pie crust around the filling, tucking it in as you fold. I linked a video to help demonstrate this.
    • In a small bowl, combine the egg and the water.
    • Brush the top of the pie crust with the egg wash.
    • Sprinkle with caster sugar and then bake for 25-30 minutes, or until the pie is golden brown.

    Ingredients
      

    • 8 ounces strawberries (sliced)
    • 2 tablespoons flour
    • 1 tablespoon lemon juice
    • ¼ cup sugar
    • 1 pie crust (see note for homemade recipe)
    • 1 egg
    • 1 teaspoon water
    • 2 tablespoons caster sugar (see note)

    Instructions
     

    • Preheat the oven to 375ºF.
    • In a glass mixing bowl, combine the strawberries, flour, lemon juice, and sugar.
    • Place the pie crust on a lined baking sheet.
    • Pour the strawberry filling into the center of the pie crust, leaving about 3 inches around the edge of the pie crust.
    • Fold the pie crust around the filling, tuck it in as you fold, as demonstrated in the linked video.
