Moroccan couscous is a really simple side dish that is easy to make! Vary the flavor to make it the perfect pairing to any main dish or even add it to a salad.
Have you ever made couscous before? It’s so easy! We love having this with so many meals. It’s definitely still a carb {c’mon, this is who I am as a person} but feels lighter than a side dish like potatoes or bread so I love using it when we don’t want a meal that is too heavy.
I usually purchase moroccan couscous because that is what is most available in my store, but there is also a larger couscous called pearl couscous that is great when you want it to really stand out, like in a salad.
How to Make Couscous
- Bring water to a boil.
- Add seasonings.
- Add couscous.
- Turn off heat and let stand.
- Fluff with a fork.
See?? So super easy. For this moroccan couscous recipe, I kept the seasonings simple but it tastes delicious as a stand-alone side without needing a lot of sauce or other flavors to make it tasty.
The half and half is optional, but I like that it adds a creamy texture that I really love. If you don’t use the half and half, the couscous may need just a little bit more water. You want it to be dry enough that is won’t excessively stick together but not too dry that it isn’t cooked through.

Moroccan Couscous Recipe

Ingredients
- 2 cups water
- 3 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon parsley
- 1 teaspoon basil
- 2 cloves garlic minced
- 2 cups moroccan couscous
- 1/2 cup half and half optional
Instructions
- Bring water, butter, spices, and garlic to a boil in a saucepan.
- Add the couscous and mix briefly. Turn off heat.
- Let sit for about 5 minutes, until the couscous is soft and water is absorbed.
- Fluff with a fork and gently stir in half and half (optional).
