    Recipe FAQs

Can I cook this chicken in a slow cooker?

Yes, you can use a slow cooker. Place the marinated chicken in the slow cooker and cook on low for 4-6 hours or high for 2-3 hours until the chicken reaches an internal temperature of 165°F (74°C). The slow cooker will make the chicken very tender, though it won’t have the crispy exterior that grilling or baking provides.

Can I use bottled lemon juice instead of fresh lemon juice?

While fresh lemon juice is preferable for its vibrant flavor, you can use bottled lemon juice in a pinch. Just be aware that it might not have the same fresh taste as freshly squeezed lemon juice.

How can I thicken the sauce if it's too thin?

If the sauce is too thin, create a slurry with a teaspoon of cornstarch and a little cold water. Stir this into the sauce and simmer for a few minutes until the sauce thickens.

Can I use chicken thighs instead of breasts?

Yes, chicken thighs are a great alternative. They tend to be juicier and more flavorful than breasts, though they may require slightly different cooking times. Bone-in, skinless thighs will need a bit more time to cook compared to boneless thighs.

    Ingredients

    • 2 large chicken breasts
    • ¼ cup salted butter (divided)
    • ¼ cup flour
    • ¼ cup lemon juice
    • 1 teaspoon Italian seasoning
    • 1 teaspoon garlic powder
    • ½ teaspoon minced onion
    • 1 large lemon (sliced)

    Instructions

    • Cut each chicken breast in half horizontally and pat each piece dry with a paper towel.
    • Dip each chicken breast in the flour, ensuring the entire surface is lightly coated.
    • Melt half of the butter in a medium sized pan. Once the butter is completely melted, add the chicken and cook for about 5 minutes per side, or until cooked all the way through.
    • Add the spices, lemon juice, and remaining butter. Continue cooking the chicken for 3-4 minutes, allowing the meat to absorb the lemon juice.
    • Reduce the heat to low and add the lemon slices. Allow the chicken to cook for 4 more minutes.
    • Serve and enjoy!

    Notes

    • The lemon slices are optional, but they add a little extra lemon flavor to the chicken and an aesthetic look to the dish.
    • Coating the chicken in flour helps give the chicken a beautiful golden brown color and gives it a little crispy for extra texture!
    • Fresh herbs provide a better flavor than dried ones so try to use fresh.
    • Serve with roasted or steamed vegetables like asparagus, green beans, or bell peppers to complement the lemon herb flavors.
