French Dip Sliders are the perfect bite for tailgating, a party, or a quick dinner. They are packed with beefy flavor and easy to make in the pressure cooker.

As Fall approaches and tailgating season arrives, I have a confession to make. I know next to nothing about sports. I watch games solely for the food! I don’t think I’m alone in this, games are such a great excuse to make tasty recipes.
We love French Dip Sandwiches at our house, they have been a favorite forever. I wanted to transform our favorite French Dip recipe into a slider form so it would be the perfect savory bite for tailgating.
I decided to develop this recipe for a pressure cooker, like an Instant Pot, because it really speeds up the cooking time. If you don’t have one, don’t worry. You can make this recipe in a slow cooker too, I have the instructions for that in the ‘Notes’ section of the recipe card.
Because this recipe is made in the pressure cooker, you’ll want to be sure the Chuck Roast you use is the same weight that’s listed in the recipe. If it’s much bigger it will take longer to cook. A smaller Chuck Roast won’t make enough beef to fill the sliders so stick between that 2–3-pound mark.
Chuck Roast is an excellent cut for a long cooking time or a pressure cooker. It gets super tender, and shreds easily when it’s cooked long enough in liquid. The onions cook down beautifully as well, and the Beef and onions combined are a match made in tailgating heaven.
Don’t be alarmed by the amount of onions in this recipe. I promise they cook down and you do really need to use that many. That classic French Dip flavor in this recipe comes from using that many onions, there isn’t any packet to fill in that flavor if you leave them out. If your family is like mine and they love the flavor but don’t love to eat them, you can serve them on the side of the sliders and let your family or guests add them to their own sandwiches.
How to Make Pressure Cooker French Dip
- On the pressure cooker, press sauté mode and set to high.
- Add the olive oil and heat until shimmering.
- Season both sides of the Chuck Roast with salt and pepper.
- Sear on each side, until browned, about 5 minutes per side.
- Remove the Chuck Roast and set aside.
- Press cancel on the pressure cooker.
- Add sliced onions into the bottom of the pot and place the seared Chuck Roast on top of the onions.
- Add in Worcestershire sauce, soy sauce, beef broth, and thyme.
- Place lid on the pressure cooker, set the vent to the sealing position, and cook on manual high pressure for 75 minutes.
- When the time is up, quick release the pressure.
How to Make French Dip Sliders
- Preheat the oven to 400ºF.
- Remove the Chuck Roast from the pressure cooker and shred the Beef into bite-sized pieces.
- Slice the dinner rolls in half. Set the bottoms on a lined sheet tray.
- Layer the onions, beef, and cheese on the sliced rolls.
- Place the top half of the rolls on top of all the other ingredients.
- Combine the melted butter, parsley, and thyme.
- Brush over the tops of the rolls.
- Cover the sliders with foil.
- Bake for 18-20 minutes, or until the cheese is melted through.
Not quite. Chuck Roast is a cut of meat from the shoulder of the animal. It is best when slow cooked because it becomes so tender. Pot Roast is a recipe that typically uses a Chuck Roast. Usually when people use the term Pot Roast they are referring to a Chuck Roast cooked in liquid with root vegetables. You can find my Pot Roast Recipe here!

While searing the Chuck Roast isn’t a necessity for the success of a pressure cooker Chuck Roast, I do recommend it. It’s easy to do in a pressure cooker with multiple settings and it adds a deeper layer of flavor to the final recipe. If you’ve never tried searing a Chuck Roast before cooking it, I highly recommend you take the extra 10 minutes and give it a try.

For the Chuck Roast
- 2-3 pounds Chuck Roast
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 4 yellow onions sliced
- 3 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 2 cups beef broth
- 3 sprigs thyme fresh, see note
For the French Dip Sliders
- 24 sweet dinner rolls
- 8 slices provolone cheese or Swiss cheese
- 3 tablespoons butter
- 1 tablespoon parsley fresh, minced
- 1 teaspoon thyme fresh, minced
Instructions

- Add the olive oil and heat until shimmering.
- Season both sides of the Chuck Roast with salt and pepper.
- Sear on each side, until browned, about 5 minutes per side.
