    My 2 Best Tips For Making Easy Chicken and Gnocchi Soup

    Fresh Gnocchi: Use shelf-stable gnocchi from the pasta aisle rather than frozen for the best texture.

    Cream Timing: Add heavy cream at the very end to prevent it from curdling or separating during cooking.

    I like to lightly toast the gnocchi in a dry pan for 2-3 minutes before adding them to the soup. This creates a golden exterior and brings out a delicious nutty flavor.

    I always save a cup of the starchy cooking water when I boil fresh gnocchi separately, then stir it into the soup to naturally thicken the broth without adding extra cream.

    You can enjoy this soup as a complete meal on its own or pair it with crusty bread for dipping! I love serving it with warm garlic bread or a simple side salad for the perfect cozy dinner.

    Ingredients
      

    • ½ cup diced celery
    • 1 cup diced white onion
    • 1 cup shredded carrots
    • ½ tablespoon Italian seasoning
    • 2 ½ cups shredded chicken
    • 1 16 ounce package gnocchi
    • 2 cups chicken broth
    • 2 cups heavy cream

    Instructions
     

    • Drizzle a little bit of vegetable or olive oil in a large pot. In the pot, stir together the onion, celery, shredded chicken, and Italian seasoning.
    • Allow the veggies to cook for a few minutes over medium heat. After about 5 minutes, add the broth, chicken, and gnocchi. Bring the broth to a simmer and then reduce the heat to low. Cover the pot with a lid and allow the soup to simmer for 25 minutes.
    • After 25 minutes, add the heavy cream and allow the soup to cook for an additional 5 minutes.
    • Serve and enjoy!

    • Look for gnocchi in the pasta aisle of your grocery store, or if making homemade, prepare 2-3 cups for this recipe.
    • Fresh carrots work perfectly if pre-shredded bags aren't available - simply dice 2 medium carrots as a substitute.
