Easy Chicken and Gnocchi Soup

Satisfying and soul-warming, this Easy Chicken and Gnocchi Soup creates a meal your whole family will love. Each spoonful provides the perfect balance of protein, vegetables, and creamy goodness!
Drizzle a little bit of vegetable or olive oil in a large pot. In the pot, stir together the onion, celery, shredded chicken, and Italian seasoning.
Allow the veggies to cook for a few minutes over medium heat. After about 5 minutes, add the broth, chicken, and gnocchi. Bring the broth to a simmer and then reduce the heat to low. Cover the pot with a lid and allow the soup to simmer for 25 minutes.
After 25 minutes, add the heavy cream and allow the soup to cook for an additional 5 minutes.
Serve and enjoy!

Ingredient Substitutions and Shopping
Look for gnocchi in the pasta aisle of your grocery store, or if making homemade, prepare 2-3 cups for this recipe.
Fresh carrots work perfectly if pre-shredded bags aren't available - simply dice 2 medium carrots as a substitute.
Yellow onions can replace white onions and will add a touch of natural sweetness to the soup.

Enhance your bowl with freshly cracked black pepper, chopped fresh basil, or a generous sprinkle of grated Parmesan cheese.
Texture Preference
For a thicker soup, mash a few gnocchi against the side of the pot, or add an extra ½ cup of cream.

Refrigerate leftovers for up to 4 days and reheat individual portions in the microwave using 30-second intervals, stirring between each heating cycle.
Avoid freezing this soup since the cream base doesn't thaw well and develops an unpleasant flavor.
