Peanut butter cookie bars are my new favorite dessert! I am now on a mission to convert every single cookie recipe I have into bar-form because they are so dang easy to make. These hit the spot if you’ve got a craving for chocolate {always me} or peanut butter!

These peanut butter cookie bars are baked, I know there are a lot of no-bake versions {also delicious} but I wanted to make one with that classic, soft cookie texture so a baked recipe was essential.

Baking the chocolate peanut butter bars also makes melting the chocolate on top super easy. Just sprinkle the chocolate chips on top once the bars come out of the oven and they melt right away and are easy to spread out. I like a small off-set spatula best for this job. 

I used a combination of milk chocolate and semi-sweet chocolate for these peanut butter bars, but you can change it to your preference. You can also mix some of the chocolate chips into the batter if you want! Lots of delicious options.

I did use oil in this peanut butter bar recipe because I wanted to make sure the cookies were the same texture and softness from edge to edge.

You can actually substitute melted butter and it will work out just as delicious. I just find that butter makes the edges more crispy and the middle softer, but that isn’t necessarily a bad thing.

Equipment

  • Redmond Real Salt

Ingredients

  • 1 cup peanut butter
  • 1/3 cup oil vegetable or canola
  • 1/2 cup white sugar
  • 3/4 cup brown sugar
  • 3 eggs
  • 2 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 cup oats
  • 1/4 teaspoon salt
  • 1 1/2 cups chocolate chips milk chocolate or semi-sweet, or a combination
US Customary - Metric

Instructions

  • Preheat oven to 350ºF. 
  • Combine peanut butter, oil, sugars, eggs, and vanilla. Mix well. 
  • Add flour, oats, and salt. 
  • Stir until combined. 
  • Pour into greased 9x13 pan. Bake for 25 minutes or until edges are golden brown and the middle is set. 
  • Pour chocolate chips over the top immediately after removing it from the oven. 
  • Let sit 5 minutes to melt, then spread the chocolate evenly. 
  • Let the chocolate peanut butter cookie bars cool and the chocolate melt.

    I just made these and while I haven’t tried them, they smell delicious. I just wanted to point out that I didn’t see to add the eggs in the recipe. Just a heads up 🙂
