    • Canola oil
    • Ground turkey
    • Taco seasoning
    • Bell pepper 
    • Green chilies 
    • Tomato sauce

    Instructions For Taco Bake Casserole

    1. Preheat the oven to 375ºF.
    2. In a medium pan over medium heat, add the oil and heat until shimmering.
    3. Add the ground meat into the pan and cook until almost browned.
    4. Add in the bell peppers and saute until soft, about 3 minutes.
    5. Add in the taco seasoning and stir to evenly coat the ground turkey and peppers.
    6. Add in the green chilies, black beans, and tomato sauce.
    7. Stir until combined and simmer 2-3 minutes.
    8. Spray a 9x13 pan with baking spray.
    9. Line the bottom of the baking dish with the flour tortillas.
    10. Pour the meat mixture into the pan.
    11. Combine the crushed tortilla strips and shredded cheese.
    12. Evenly distribute the crushed tortilla strips and plenty of cheese over the top.
    13. Bake for 20-25 minutes until golden brown.
    14. Top as desired.

    Yes, you can freeze your taco casserole, but I recommend leaving the toppings out of the mix if you plan to freeze. Place your cooled taco casserole in an airtight container and store it in the freezer for up to 3 months. When ready, thaw your casserole overnight in the refrigerator, bake until heated through, and top with your favorite toppings.

    What corn chips are best for a taco casserole?

    • 1 ½ lbs ground turkey (see note)
    • 1 packet taco seasoning
    • ½ cup bell pepper (any color)
    • 4 ounces green chilies (1 small can)
    • 15 ounces tomato sauce (1 can)
    • 16 ounces black beans (1 can)
    • 3 flour tortillas (8 inch)
    • 1 cup corn chips (crushed)
    • 1 cup cheddar cheese (shredded)

    For Serving

    • olives
    • tomatoes (diced)
    • green onion (sliced)
    • pico de gallo
