Taco Bell Steak Quesadilla Recipe FAQs
The sauce in Taco Bell quesadillas is a creamy jalapeno sauce — just like the one used in my homemade recipe. It's a delicious combination of mayo, sour cream, jalapenos, and seasonings.
Any cheese that melts well is great for quesadillas! My go-to is Cheddar cheese, but Monterrey Jack, Pepper Jack, or a Mexican cheese like queso Oaxaca all work perfectly.
The question should be, what don't you put inside a quesadilla? The beauty of quesadillas is that you can fill them with whatever your heart desires. So long as there’s a cheese to bind everything together, you can add any combination of meat, vegetables, beans, and sauces.
My steak quesadilla Taco Bell recipe can be a complete meal - it's loaded with protein and all the fixings! Squeeze some fresh lime juice on top and serve with your favorite salsa or pico de gallo. Or, try it with some Cilantro lime rice, Avocado corn salad, or Corn on the cob.
Leftover steak quesadillas can be stored in an airtight container in the refrigerator for 3-4 days. To reheat, place them on a non-stick pan or griddle over medium-low heat until heated through.
Expert Tips
- Don't overstuff the tortillas with filling: they will be difficult to flip and may fall apart.
- Use tender meat: A tender cut of steak makes the best steak quesadillas. You can use flank steak, skirt steak, or sirloin, but you can use whatever steak you prefer.
- For extra cripsyness: toast one side of the tortilla, flip it over, and add the fillings to the toasted side. The other side will get crispy as the quesadilla cooks.

For the Creamy Jalapeno Sauce
- ¼ cup mayonaise
- ¼ cup sour cream
- 1 tablespoon pickled jalapenos (minced)
- 1 teaspoon pickled jalapeno juice
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ¼ teaspoon paprika

For the Creamy Jalapeno Sauce
- Combine all ingredients and mix until smooth.
For the Steak Quesadilla's
- Toss the cooked steak and the shredded cheese with the taco seasonoing.
- Heat a skillet to medium-low heat and melt 1 tablespoon of the butter.
- Spread desired amount of creamy jalapeno sauce on each tortilla.
- Place one tortilla in the pan and place half the cheese, steak, and taco seasoning mixture on top. Top with another torilla.
- Cook about 3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat for the remaining quesadilla.
Notes
- Add some avocado: If you want to reduce the amount of cheese, you can add some mashed avocado to the quesadilla. It's still creamy and delicious! Don't omit the cheese completely; it helps hold the quesadilla together.
- Use different cheese: While cheddar is one of the cheeses in Taco Bell's original recipe, a traditional Mexican cheese like queso Oaxaca or Chihuahua cheese would be a great alternative. You can also use a mix of different cheeses for more flavor.
- Try a different meat: If you're not a fan of steak, you can use grilled chicken, turkey, or ground beef.
- Make it dairy-free: Use vegan cheese, cooking spray, and coconut milk yogurt (to replace the sour cream) to make this recipe dairy-free. Choose a vegan cheese that melts well, as some brands don't melt as easily.
