Kale Apple Salad with Orange Vinaigrette

Kale apple salad is easy to toss together and the orange vinaigrette sends it over the top! Perfect for any time of year and family-friendly. 

Kale apple salad with an orange vinaigrette may be a mouthful to say, but in order to say it, you have to slow your fork and take a pause from eating- which is nearly impossible. 

If you’re looking for a healthy salad that is simple, fresh and homemade, this kale salad is definitely the one you want. Using fresh kale, apples and freshly squeezed oranges, you don’t get any fresher than this! The red onions help to round out the flavor profile as it all comes together to form one sweet, savory, refreshing salad perfect for your next meal.

What are the ingredients in this kale apple salad?

  • Olive oil
  • Oranges
  • Lemons
  • Apple cider vinegar
  • Sugar
  • Salt
  • Pepper
  • Kale
  • Red onion 
  • Apple 

To make the salad is as easy as prepping the ingredients and tossing them all together. That famous phrase, “quick fast and in a hurry” was a direct quote from me when talking about how fast this salad comes together.

How do you cut kale for a salad?

First, wash your kale really well if you haven’t done so already. This can be done as soon as you arrive home from the grocery store if you store it properly afterward. This also helps to reduce the amount of time needed to prep this salad. #Bonus!

If you don’t have time or the desire to do this it’s okay! You can also choose to chop your kale before you wash it. This might actually make it easier since it will be in smaller pieces.

To chop your kale, lay it flat on a cutting board and grab a chef knife. Simply cut strips in one direction and then flip your angle 45 degrees and cut strips in the opposite direction. This will give you small “squares.”

You may want to remove most of the stem portion of the kale pieces as they are tough and chewy (you can save them for a future dish though! Sautee’d kale stems can become a delicious side dish tomorrow). To do this just run the tip of your knife along the thicker sections of the stem to help cut them out. Then set them aside in a zipper topped bag and you’re good to go!

After washing the chopped kale, mix it is a salad spinner or let it sit in a colander over a towel to help drain some of the excess water while you prep the rest of the kale salad ingredients. 

When your kale is drained and the other ingredients have been prepped, toss them all together in a large bowl and dig in!

  • Measuring Cups + Spoons
  • Glass Mixing Bowls
  • Santoku Knife

Ingredients

For the Dressing

  • 2/3 cup olive oil
  • 2 oranges juiced
  • 2 lemons juiced
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons sugar
  • 1 teaspoons salt
  • 1/2 teaspoons pepper

For the Salad

  • 4 cups kale shredded
  • 1 red onion sliced
  • 1 apple large, sliced

Instructions

  • Combine salad dressing ingredients in a jar and shake until emulsified.
  • Toss salad ingredients together.
  • Dress salad to taste.
