Homemade strawberry cake is easy to make and a showstopper at any party. You’ll get asked for this simple recipe over and over!

Homemade strawberry cake and a nice cold glass of lemonade sound like a great way to enjoy that summer sunshine.

While you could just as simply go to the store and buy a box of strawberry flavored cake mix, nothing really compares to the taste and feel of a fresh strawberry cake. Something about it just feels right.

Nothing can compare to the taste of a freshly baked cake made with love, and this strawberry cake from scratch is just that.

What’s great is that this homemade strawberry cake only needs 1 ½ cups of sliced strawberries, which means that you’re free to use the rest of the berries in your 16oz container for decorating the top, or eating as you prepare the cake mixture.

This homemade strawberry cake is made with buttermilk, but if you don’t have any in stock, you can substitute whole milk and lemon juice. Simply measure out a ½ cup of whole milk and then remove 1 tablespoon of it. Add in 1 tablespoon of lemon juice and you’re good to go!

How to make this delicious homemade strawberry cake

  • Mix together flour, salt and baking powder in a bowl and then set it aside.
  • In another bowl whisk together the eggs, sugar, oil, and buttermilk (or your homemade substitution).
  • Once all of your wet ingredients are combined, gently fold in your dry ingredients a little at a time until everything is well incorporated.
  • Then toss in your freshly sliced strawberries and mix until they are evenly distributed.
  • The more you mix the more the colors will blend together, so if you want a mostly white colored cake try not to over mix the batter.
  • Pour your cake batter into prepared into well-greased cake pans and bake. 

Lining the bottom with parchment paper is a great trick to help keep the cake from falling apart when it’s removed from the cake pan after cooling. This trick actually works better than sprinkling flour on your cake pans and it makes the cleanup afterward even easier. 

What kind of frosting for strawberry cake?

Now that we’ve gone through all of the hard work of making a delicious strawberry cake from scratch, what is the best frosting flavor for strawberry cake?  

While a nice buttercream frosting can pair well with the flavor profile of this strawberry cake, you may choose to opt for a lighter option. 

Simply sprinkling powdered sugar over the top of this cake is more than sufficient for a delicious cake. You may even be able to convince others that it’s a breakfast cake if you opt for no frosting.

Another idea is adding whipped topping and more strawberries. This is also a great way to make it into a delicious summer-time dessert.

Ingredients

  • 1 3/4 cups flour divided, all-purpose
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 eggs large, room temperature
  • 1/2 cup oil canola or vegetable
  • 1 cup sugar
  • 1/2 cup buttermilk see note
  • 1 1/2 cups strawberries sliced

Instructions

  • Preheat oven to 350ºF.
  • Sift together 1 1/2 cups flour, baking powder and salt. Set aside.
  • In a large bowl, whisk together eggs, sugar, oil, and buttermilk.
  • Fold dry ingredients into the wet ingredients until almost combined.
  • Toss strawberries with remaining 1/4 cup flour.
  • Fold the strawberries and flour into the batter until just combined and evenly distributed.
  • Pour batter into a well greased and parchment lined cake pan (see note).
  • Bake for 40-50 minutes, or until the top is golden brown and a toothpick comes out clean.

Notes

To make DIY buttermilk, remove 1 tablespoon of milk and replace with 1 tablespoon lemon juice or white vinegar. Whisk and set aside to thicken for a few minutes. 
I line just the bottom of my cake pans with parchment. Fold the parchment into fourths, then into a triangle. Measure from the middle of the cake pan to the outside of the cake pan with the folded parchment, with the point of the triangle in the middle. trim to fit.
