How To Make Oven Baked BBQ Chicken
Step 1: Cooking in your Dutch oven using charcoal briquettes may sound scary, but the flavor and tasty results of a well-cooked meal will have this quickly become a more favored method of cooking. The best part is that since you’re cooking outside, you aren’t heating up the kitchen. Perfect for wanting to enjoy a delicious barbecue chicken breast on a hot summer day.

Pro Tip: To use your cast iron for baking, place the majority of charcoals on the lid of your dutch oven. The rest of the briquettes are placed around the bottom. While the placement of the charcoal briquettes is key for your dutch oven chicken to cook properly, it’s actually as simple as forming a circle.
Step 2: You’ll need 4 chicken breasts that are cut lengthwise. By making the chicken thinner and getting the pieces to be about the same size, you help them to cook at about the same rate so no pieces get done too quickly.

Step 3: Season your chicken and pour your favorite barbecue sauce on top. A homemade barbecue sauce would be excellent on these! Then prepare your Dutch oven by securing the lid on top and getting the hot charcoal briquettes all in place.

Pro Tip: Placing your hot briquettes in a circle around the outer edges of your dutch oven and 3 underneath will help to evenly distribute the heat. By placing 20 charcoal briquettes on the top of your dutch oven you are amplifying the heat, but because it doesn’t come into direct contact with where the chicken is resting, it won’t burn.
Step 4: After about 30 minutes your chicken should be cooked through, double check with a Thermoworks meat thermometer to make sure it reached 165ºF.

Recipe FAQs
Yes! You can season the chicken and make the BBQ sauce up to 24 hours in advance. Store them separately in the refrigerator until you're ready to cook. This actually allows the seasonings to penetrate the meat better, resulting in more flavorful chicken.
Dutch oven chicken is tender, juicy, and so easy to make. It's a simple dinner that's a breeze to throw together.
While you can use boneless chicken, bone-in pieces are recommended for this recipe as they stay juicier and more flavorful during the long cooking process. If using boneless pieces, reduce the cooking time by about 15-20 minutes and watch carefully to prevent drying.

Expert Tips
- Use a Heavy-Duty Dutch Oven: A good-quality Dutch oven with a tight-fitting lid helps retain heat and moisture, ensuring the chicken cooks evenly and stays juicy.
- Sear the Chicken First: Take time to properly sear the chicken skin-side down until golden brown before adding your BBQ sauce. This step creates a flavor foundation and helps the skin retain its texture even after being cooked in the sauce.
- Don’t Overcrowd the Pot: Arrange the chicken pieces in a single layer so they cook evenly. If necessary, cook in batches or use a larger Dutch oven.
- Let It Rest Before Serving: Allow the chicken to rest for 5–10 minutes after cooking. This helps the juices redistribute and makes the meat even more tender.

How To Store Leftovers
Store leftover BBQ chicken in an airtight container in the refrigerator for up to 4 days. Be sure to spoon extra sauce from the Dutch oven over the chicken before storing – this keeps the meat moist and flavorful during storage.
To reheat, place the chicken and sauce in a covered dish and warm in a 300°F oven for about 15-20 minutes, or until heated through.
You can also freeze the cooked chicken for up to 6 months – just wrap individual portions tightly in plastic wrap, then place in a freezer bag.
When ready to use, thaw overnight in the refrigerator and reheat as directed above. The sauce might separate slightly after freezing, but a quick stir while reheating will bring it back together.
